Do you miss creamy pasta sauce??

I am a huge sucker for anything creamy.  I found that a good way of making creamy sauce is using mostly fat free milk and a little bit of flour and parmesan to cut down on calories.  I make a creamy mushroom sauce with some grilled chicken thighs (you can use chicken breasts to cut out on even more calories) and make some pasta (I love Ronzoni SmartTaste) or brown rice.  Round it out with something like roasted green beans and you can have a hearty, comforting meal for around 500 calories!

I'm making this again tonight with some pasta and green beans!  Also making extra for the boyfriend to take to work the next day :)

Have you tried using quark? Quark is a low fat cream cheese, I use it a lot to replace full fat cheese like ricotta - it has half the amount of calories in, and very similar taste and texture.

I use it as an alternative in spinach and ricotta cannelloni, or in place of cream in a dish like a korma curry.
