| 1 | lb. chicken |
| 1 | Pepper, sweet, red |
| 4 | c. Pineapple, Canned |
| 1 | tbsp. Ketchup |
| 1/2 | c. chicken broth |
| 1/2 | tsp. salt |
| 1/2 | tsp. Pepper |
| 1 | tsp. Olive Oil |
| 1 | onion, chopped |
| 1 | tsp. soy sauce |
| 1/2 | c. brown sugar |
| 2 | tbsp cornstarch |
Recipe Directions for Mom's Hawaiin Chicken
- Cut the chicken into bite sized chunks. season with olive oil, salt and pepper. Grill until cooked.
- To make sauce: In a large pot, combine 1/2 c. chicken broth, 1 can (20 oz.) Pineapple chunks (reserve Juice for later), onion, and peppers(cut these into strips). Simmer 10 - 15 minutes.
- Add to sauce: soy sauce, brown sugar, pineapple juice, Ketchup, cooked chicken.
- Thicken sauce with 2 Tbsp. cornstarch.
- Serve over rice.
