Moosewood Low-Fat Mac and Cheese
Hey guys,
I want to share this recipe. I, myself, didn't make it (all rights go to Moosewood. I didn't make it! I just wanted to share!), but i've made this three times, including for my fussy mother who doesn't want to eat vegetarian, and it's been a hit every time.
It's perfect for those, like me, who find that there are just some comfort dishes you aren't ready to give up.
it's also ridiculously easy (compared to alot of the cooking I've done)
Ingredients:
1 1/2 cup 1% cottage cheese
1 1/2 cup skim milk or buttermilk (if you want a creamier Mac and Cheese, and I know you do, use the buttermilk!)
1 tsp dried mustard or 1 tbsp prepared mustard
pinch of cayenne
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup grated onion
1 cup extra-sharp Cheddar Cheese
1/2 lb. uncooked elbow macaroni
2 tbsp finely grated Pecorino or Parmesan Cheeses
1/4 cup bread crumbs
Preheat the over to 375 degrees. Prepare a 9 or 10 inch square baking pan with a light coating of cooking spray.
In a blender, combine the cottage cheese, skim milk/buttermilk, mustard, cayenne, nutmeg, salt and pepper and puree until smooth.
In a large bowl, combine the puree, the onion, macaroni and cheddar cheese and stir thoroughly.
Pour the mixture into your pan.
Combine the Pecorino/Parmesan and the bread crumbs and sprinkle on top of the mixture.
Bake about 45 minutes, until the top is browned and the center firm.
Nutritional Information:
For 10 oz. serving (about 1/4 of the dish), 471 calories, 30.7 grams protein, 13.2 grams fat (7.7 gram of saturated, 0.8 polyunsaturated and 3.7 gram unsaturated), 55.7 gram carbohydrate, 38 mg cholesterol, 1008 mg Sodium, 1.9 gram of fiber
Remember the serving size, folks. 1/8 piece of this mac and cheese and a side salad can sate my girlfriend and I. :)

I was at Wegmans last night and saw a New Moosewood Cookbook!!!
I <3 Wegmans! So glad we have one here in Fairfax. Felt lost without it in MD (before i got to these boards)

I think it was really called "The New Moosewood Cookbook" I didnt look thru it but it was big!!!! May go and get it. They sell some moosewood soups at Wegmans.

We're definitely going to Moosewood for dinner. :-) Ithaca has good eats of all kinds, with lots of options for vegetarians. (I'm not a vegetarian, but don't eat a lot of meat, so veggie meals are fine for me.)
For lunch, we often go to the Farmer's Market and pick something up from one or more of the vendors. Today it was flat bread with toppings (which ends up being pizza-like), fresh cherries, pakora (veggies), fresh lemonade, and chocolate ganache in a pastry shell with fresh raspberries.
