Alright, I absolutely NEED to share this recipe. I tried it out for the first time last night and it totally knocked my socks off. :D

It's Moosewood, so it's all vegetarian, however if you want to add some lean beef or some lean turkey, I believe both would work well with this recipe.

So.. onto the recipe!

Ingredients:
1/2 cup bulghir
1/2 cup hot water
28 oz. undrained canned tomatoes (Please note.. I used crushed tomatoes. I despise whole tomatoes :D )

2 tablespoons olive oil or vegetable oil
3 cups chopped onion
3 garlic cloves, minced or pressed
1 generous teaspoon ground cumin
1 generous teaspoon chili powder
1 tablespoon Tabasco or other hot pepper sauce, or 1/4 tabelspoon cayenne (I used the cayenne)

2 green bell peppers, chopped
2 cups fresh or frozen cut corn
14 ounce can cooked black beans, drained
14 ounce can cooked red kidney beans, drained
salt to taste

Optional:
Grated Chessar or Monterey Jack Cheese (I used 2% Milk Sharp Cheddar)
Chopped Fresh Cilantro

  1. Place the bulghur, hot water, and abotu a cup of the juice from the canned tomatoes in a small saucepan (Note: Since I used crushed tomatoes, it was mostly water with a little of the liquid off the top)
  2. Cover and Bring to a boil on high heat, then lower the heat and simmer gently
  3. While the bulghur cooks, heat the olive oil in a large pan and saute' the onions, garlic, cumin, chili powder, and tabasco or cayenne
  4. When the onions are soft, stir in the bell peppers and saute' for 2 to 3 minute more.
  5. Chop the tomatoes right in the can (unless they're crushed) and add them to the pan. Stir in the corn and beans.
  6. Heat thoroughly on low heat.
  7. Taste the bulghur. When it is cooked but still chewy, add it to the pan with it's liquid.
  8. Cover and simmer for a few minutes for the flavors to meld. Add salt to taste.
  9. Serve plain or topped with grated cheese and fresh cilantro (Trust me: use both the cilantro and the cheese! :D )
For an 8 oz. serving, 190 calories (not including optional cheese), 6.8 g protein, 5.8 g fat, 30.4 g carbohydrate

Many, many thanks!  My hubby loves chilli and I've been trying to find one that would appease him and still work for me!  I am so tagging this one!

I am SOOOO making this over the weekend. I wonder if I could freeze a batch, since I only have myself and a 4 year old to feed. It sounds delish! Thanks HK!
Yeah, it seems to freeze well :) I frosted, defrosted and brought it in for lunch :)
This is a great recipe.  How many servings does it make?
I am going to try this with whole tomatoes because i LOVE whole tomatoes and without the corn because I DESPISE corn!

I swapped the yucky green peppers for red peppers and added some lean ground turkey with the onion. yum.

Oh, and 'cause I had some I put a tablespoon of salsa verde on top with the cheese.

Oh and Claire, with the extra 1/2lb of turkey I got about 10 servings total.
Yeah, recooking it this weekend with 1 lb. of lean turkey :D
Okay, I just made this with the crushed tomatoes( tomatoes from my garden), and I also think it's really good....Thanx for the terrific recipe!

I made this for dinner tonite, but since I HATE green peppers, I used one yellow and one red pepper instead!  No idea why I hate green ones, but they are gross!  I also used tobasco instead of cayenne as you did.... YUM!  I really need to dust off my moosewood recipe book!
Okay, I am bumping this recipe.

I tried it in October, and loved it...I decided today, I am in the mood to make it again...and with the new year, maybe someone hasn't seen it....I think it's great!

what is bulghir? i tried googling it and could not find it.

Bulghur. Wiki spelled it wrong. It's a type of grain :)
