What more can I do with this dry chicken breast and chicken period?

CoolNeedless to say, the ultimate diet food besides salad is CHICKEN! But waht more can I do with it besides bake and grill it. I need some new exciting flavors to get my tastebuds rolling!  Any GOOD recipes please let me know!

Seared chicken breast with a pineapple salsa

Dice pineapple pieces, tomato, red onion, fresh cilantro,fresh parsley,juice of a whole lime,chili powder, salt, pepper.and a sprinkle of sugar. Put in the refrig for a couple of hours. Season the chicken with mrs dash garlic and herbs, and some chili powder . Sear chicken breast in frying pan with a little omega 3 canola oil and some chicken broth. Cook chicken until crispy on outside. Keep turning so not to dry the meat. I like to serve this with some cous cous and fresh green beans. (I cook the beans in the same pan that I used for the chicken, just add a little more chicken stock and some fresh garlic) Don't clean pan first

Lime & Honey Chicken

Marinade

1 Lime Juice & Zest

1 Tablespoon Honey

1 Tablespoon Olive Oil

Salt & Pepper

Only Marinade the chicken for 1/2 an hour tops and grill.  It is great in fajatis or a side of veggies.

Chicken Fajita Recipe

Makes 6 servings
Light Dinner

  Ingredients:
 6 Whole Wheat Tortilla
1 Chicken Breast
1 small Onion
1 Green Pepper
1 1/2 cups Salsa
1/2 cup Shredded Sharp Cheddar Cheese
3 cloves garlic
2 T Olive Oil

Directions

  1. Cut Onions and peppers in strips
  2. Mince Garlic
  3. Saute vegies in oil.
  4. Cut Chicken Breast into thin strips
  5. Add to the vegies
  6. When cooked, ad salas and simmer
  7. Warm Tortillias and fill, top with cheese and fold.
