Hello! I'm back to CC after a looooong absence!

I was wondering- how can I sneak more vegetables into my daily diet?

I'm usually gone ALLLLL day, so I pack all  my meals and snacks with me. I mean, carrots are easy to pack and sometimes I'll make a salad and take it, but I was wondering if there were any ways to sneak vegetables in that I'm not thinking of. Thanks! :-]

Well, if you are already packing food... try chopped up broccoli and cauliflower.  Works pretty much the same as carrots.

Make yourself a wrap with lots of vegetables like fresh spinach, shredded carrots, tomatoes, onions, mushrooms, or whatever you like.  Add cottage cheese, hummus, salsa, or some other low-cal condiment to add moisture and flavor.  Even better if you use a high-fiber, low calorie tortilla.

I love fresh bell peppers.  You can make muffins with beans (you don't taste them).  Smoothies with blended veggies in them.

Maybe you could try dehydrated veggies. Almost like chips.

try putting some cucumber, celery, bell pepper, onion, lettuce, bean sprouts, and even some carrot strips on a turkey samwitch or wrap.

I use lettuce and wrap my ham around it instead of eating bread ....

 

lettuce, tomatoes , and carrots wrapped in ham is so yummy !!!!!

grate veggies into sauces, like for spagghetti (i do this for my son lol he is 2) always keep cut veggies for snacks, and diced veggies in the freezer for putting in anything (peppers, onions, carrots, celery).

I adore cold steamed asparagus and raw red pepper strips.
Thanks for all the ideas! I think more wraps and treating veggies more like snacks will go a long way. :-]

I have a VERY hard time eating salad, so I add a bit of cheese, vinegar, sometimes olive oil, and salt and pepper. Then I put it in the fridge for an hour or so,

this makes it cold and delicious, and way more filling than regular salad.

I have to sneak veggies into meals so my son will eat them.  If you make something with tomato sauce, put chopped fresh spinach, chopped bell peppers (red, yellow and orange one are really good) chopped celery and carrots. If you make Mexican put a can of corn in it.  Make a stir fry with with pre-cut frozen vegetables.  I have learned to put spinach in just about everything, you really cant taste it when its fresh and cooked...I love it anyway so I use it instead of lettuce for my salads or on sandwiches, burgers.
