another nacho person! my big weakness! Hope someone has a low cal recipe!
that's a hard one! i've tried it with the baked chips, and they just turn to mush. maybe if you did a low-fat 7layer dip type of thing (f.f. sour cream, cheese, beans, etc), and then just dipped some baked tortilla chips into them. or you could do them Flanders-style with cucumbers and cottage cheese! (just kidding!!!)

I just had a hankering for Mexican food

so I made turkey Chili (with lean turkey)
you can drain any fat.

The light sour cream to me is better then the fat free, but Kraft fat free shredded cheddar cheese is surprisingly tasty.

I bought smaller Pyrex bowls and I fill a bowl about 3/4 of a cup cut up onions tomatoes maybe one olive a tablespoon of cheese and sour cream and then I only take about 5 chips to eat with it. It was really good. The trick was not going back for more ;)

Sometimes I purposely try to take a small helping initially so I can feel like I am getting seconds. It's a mental thing I guess.

I haven't measured this one out, but I think it's reasonable.

Use a tortilla (soft one), lightly brush with olive oil and sprinkle with garlic butter, toast in the toaster oven (or under the broiler).....

Sometimes I put shredded cheese on top.

For Salsa I have two homemade one's that I use....

Traditional Salsa:
Plum Tomatoes (cut really small)
Cubenella Peppers
Jalapeno Peppers
Red Onion
Cilantro
Leamon juice (just a smidge - like one leamon wedge)

Olive Salsa:
Vine Tomatoes
Red Onions
Kalamata Olives

I haven't made these since I've been logging calories (Jan 9th) and also because it's friggin freezing outside.... I probably will do in the spring when I'm craving food like this again and find out what I usually measure them as and the calorie count for a serving of each.

Does that really work for tortilla chips? I'm looking for relatively healthy tortilla chips I can use with my homemade salsa. Are you talking flour tortillas?
Try Wheat Thins (though check the calories/portion number first). Use them to dip into a layered dip. They're certainly not tortilla chips, but if you have enough nacho goodies on them, you hardly notice the taste. Emphasis fresh tomatoes, cilantro, spices.

Hint: as a sour cream substitute, use yogurt that is strained over night in a cheese cloth (sitting in a colander).
Yes the tortilla works. You dont need oil either, but they curl a bit more, so you may want to weigh down or use water. Its prety good as the la tortilla ones are super low cal.
Use salsa low cal (tho homemade is best!)
Instead of sour cream cottage cheese works well. I find natural yogurt too bitter. Just blend the cottage cheese and add about 1tsp lemon juice, let sit for an hour and its great - no lumps.
For a lunch meal use red kidney beans in the salsa.
Can sprinkle some low fat parmesan if you NEED cheese
I am happy to see I am not alone in my weakness. I create caloric deficits JUST for nachos! Instead of ground beef, I substitute black beans and reduced fat cheddar. My absolute favorite, however, is imitation crab. The imitation crab is also fat free. Mmmmm.... crab....

I made a 7 layer bean dip and then used carrots, celery and peppers to dip in.  They provide the crunch that you're looking for.  And, I was surprised by my desire to choose a carrot over a Tostitos Nacho!!!  It really was better.

I work at a resort and the cooks make us an amazing LOWER FAT nacho dish for all the ladies that watch their weight on the job:

- layer a pan with reduced sodium lower fat nacho chips - use boca meat or the leanest gound/turkey beef (96% fat free) - OR chicken OR shrimp (for a high protien low fat option) - Reduced Fat Baked Beans - Salsa - 2% shredded moz and chedder cheese mix - Chopped Tomatoes - Chopped Onions - Sliced black olives - Jalapeņos - Bake in the oven for 5-10 min until the cheese is melted - Lime Juice and Cilantro on top - and we use fat free sour cream and guacamole that is homemade (fewer calories when you make your own) - I load my plate with lettuce and then help myself to the nachos....mix it all up like a salad...the lettuce will help fill you up a bit...and you would be surprised how many fewer calories you use when you substitute with lower fat goods. - The girls who really watch thier weight, add all the mixins to their lettuce salads and induldge in only a few chips that they crumble on top. You still feel like you are getting your nacho fix and it is Very Low Fat!
