Need advice - Favorite Pistachio foods?

So, all my Christmas shopping is done... except for my father. He's one of those "I don't want anything" but, I want to get him something anyway.

So, he's a big pistachio fiend. He likes to sit late at night, working or reading, with a cool glass of beer and some of those beer/wine nuts. His main addiction is pistachios.

So I want to make him a basket of pistachio items. I already have shelled/unshelled bags in mind (willing to take more suggestions though!), I'm thinking of getting some pistachio nougat I saw at Whole Foods, but other than that, I'm at a loss.

Anyone got some pistachio tips? =D

For the type of person your dad is, I find that making something means more to them than buying somethings because tangible things for Christmas aren't worth too much, but the thought of someone thinking of them means more to them, and what more to express that than to use some of your own time to make them something special?  Are you a baker?  I was thinking, maybe you could try baking him pistachio cookies or biscotti.

 Well, I hear that all the time, but really, he is gone 3 weeks out of 4, so yeah, I'm a baker and already considered that possibility, and I want to get him something that he can take with him. A dozen cupcakes won't survive airport security. In fact, we're meeting him in Germany for Christmas.

Try TrueNorth Pistachio chips. They're like crackers with bits of pistachios in them and all natural.

pistachio ice cream.

pistachio larabars.

pistachio cookies.

pistachio nut butter (i've never seen this in shops but i bet you could find a recipe online, put it in a pretty jar and he could take it with him to spread on toast XD)

Biscotti might last him a while then =]  They're quite durable, and should be able to bypass airport security.  If that won't do, then I've heard of this place where you can put words on every single pistachio shell...but I'm not sure if you'd think that a waste or not haha

Heh... I'll try to find some pistachio biscotti. I'm afraid my baking skills only extend to cupcakes.

Ooooh, I've actually had him try TruNorth pistachio chips... unfortunately he didn't like them. =(

Maybe some kind of pistachio brittle (like peanut brittle)? (a la a recipe like this)

Or a trail mix with pistachios? Granola bars with pistachios in them?

Does he walk a lot? This pistachio foot cream smells great (my mouth waters when I use it) and is great for tired, overworked feet.

Does your dad like to cook? You could compile him a list of any recipes that you do end up making for him to try. So, say, if you make the brittle, you could add a recipe so he can do it himself.

I haven't made these Cranberry Orange Pistachio Bars, but I love the magazine, it got good reviews and the recipies are always very reliable : )

There is a nice green colored instant Pistachio Pudding out there.

Everybody's Nuts are the best pistachios!  I love the European Roasted ones.  They are bit hard to find though.  Walgreens carries the brand but doesn't always have all the varieties. 

I love Lindt Pistachio bars (check pic here), it has a cream with pistachio nuts covered in the most delicious milk chocolate. Just delicious, my favorite chocolate bar.

They may be a bit hard to put in a basket, but my friends and I made these amazing appetizers with pistachios; goat-cheese covered grapes with a crushed pistachio coating.

 

What you do is roll some soft goat cheese in your palm with a grape until it's covered. Then, roll it around in crushed pistachios (you can grind the nuts in a blender). Put them in the fridge for an hour, and they're ready to eat!
