Hi I LOVE hummous but i want to have a go at making it myself, cuts out all the gross crap they stick in things right plus i just like trying new things.

I LOOOOOOVE garlic so anyone got a nice low kcal ish recipe that tastes really good??

Oh and any ideas wt to eat it with, i no on pitta bread or as a dip for crudites etc anyone eat it any other way?

I have had a lot of hummus in a lot of different Middle Eastern restaurants, and this is as good or better than what they serve.  It is mind-blowingly good if you make it using your own beans from dried.  Tahini cannot be construed as low fat in any way but this recipe doesn't use a whole lot, and I find you can even knock it back a little bit from how much they use.

I'm pretty sure you just crush up some chick peas, with a bit of oil added, and garlic and if you want some lemon juice.

You can add any spice you can think of to it's base which is just crushed/pureed chick peas.

I'm pretty sure its spelled "Hummus" btw.

The traditional ingredients are simple - pureed, cooked chickpeas, seasoned with lemon, garlic and olive oil.  Sometimes tahini, or sesame paste is added - that's the classic middle eastern flavor.

I love making it with roast garlic and lemon zest & juice, and I add finely minced parsley too.

Check out America's Test Kitchen's book, "The Best Light Recipe".  They take all their classic favourites and cut the fat.  And they do a great job.  Hummus is in there, as well as how to make your own, baked pita points.

I love hummus, and if I have the energy I start from dried, but I also like it from canned.  To me, it isn't hummus without tahini, in spite of having a few more calories.

In terms of other uses beyond as a dip, I love it as a vegie sandwich.  Take some good whole wheat or other whole grain bread, spread it fairly thickly with hummus, add thin sliced cucumbers, lettuce, red bell pepper, carrots, sprouts, whatever you like in the way of fresh vegies, I love it most with cucumbers.  Yum!

I make it all the time, it's so easy - throw everything in a mixer and mix:

  1. 1 large can chickpeas, drained
  2. 1 or 2 tb extra virgin olive oil (more tastes yummier but depending on if you're trying to keep the cals low, same for the tahini)
  3. 1 or 2 tb tahini
  4. 3 or more fresh garlic cloves (more if you like it really spicy)
  5. juice from 1 or 2 lemons

you can also add flavourings like cayenne pepper, paprika, curry powder, cumin etc, i've done all these at one time or another, so delish. eat with chopped veggies or pita bread. use as a sandwich filler with lots of lovely veggies - particularly delicious on whole wheat with roasted veg - roasted red peppers, zucchini, egglplant, red onions etc. happy eating!

This  is the way that I make hummus and I LOVE IT! LOVE IT! LOVE IT!  And it is lowfat as well.  I soak a 1 lb bag of chick peas over night and then cook them for several hours.  I put 2 cups with 1/2 c. broth in little bowls and freeze what I am not immediately using. 

2 cups cooked garbonzos

about 1/2 cup water or broth (from cooking them)

3/4 tsp salt

1 garlic clove

1 Tbs. lemon juice (you can add more, but I prefer less)

2 Tbsp. Tahini

Blend everything in blender.  Super yummy!  And my favorite way to eat is is on a whole wheat flour tortilla with sauteed mushrooms, tomatoes, and onions.  Mmmmmm! 

Also very good for dipping celery and cucumbers into.

Super good on a rice cake with a little avacado and slice tomato. 

I also will put about 1/2 cup of my hummus on top of a big green salad with some mashed tofu (seasoned with a little salt and onion powder).  This is unbelievalby tasty, too.

If you really want  to make it from scratch, you can actually make your own tahini too, from toasted sesames seeds blended with olive oil in a food processor. Tastes different from the store bought kind, though--

 

really good with some honey on a slice of bread!

I put some sauteed cumin in mine.  Gives the oil a nice flavor.  And I love cumin anyway.

Roasted red peppers makes a nice addition too, and lowers the calories....just roast a red pepper until the skin turns black, peel it and core it and toss the flesh in with the chickpeas etc.  in the blender.

A recipe idea for hummus is to cut up some chicken breast and sautee it in cooking spray (you can marinate it or put spices on it). Then spread the hummus on the plate and place the chicken breast on top. Eat it with pita bread and add a salad for some veggies. It's super yummy! I've never made it myself, but I've had it at a restaurant and it is delicious!

For a delicious twist, add some fresh basil, a splash of balsamic vinegar and another of soy sauce to the food processor while making hummus.  I could eat that stuff with a spoon (and I frequently do!)

In addition to a dip, I use it as a sandwich spread or thin it with water to make a salad dressing.
