I don't have a recipe, but I really like bok choy. I made a great dish last night. I sauted sliced white garlic with turnips. Then added turnips, turnip greens and bok choy. I added the stems first and added the chopped green tops at the very end so they wouldn't get too wilted. I had already made home-made seitan so I heated that in the microwave and added it to the greens. I used the soup base from the seitan for seasoning (it already had vegetable soup and seaweed.) It tasted great! My 8 year old twins were raving about it.

I just stir fry it with garlic, ginger, scallions, dark soy sauce with mushroom, brown sugar, some crushed red chilis and rice vinegar (any veggie is good like that).
Easiest one is my mums. Steam. Toss in oyster sauce :)
I like to use the leaves to wrap up rice. I like guy lan better as I dont like bok choi stalks. You can also do bok choi salads.

My mom always takes some chicken, soy vay, a package of mixed veggies (usually including, but not limited to carrots, proccoli, and peapods) and bok choy. She then serves it with brown rice, and you've got your entire meal :-)
Steamed baby bok choy with crispy fried tofu on the side, dip both into light soy sauce. Simple and amazing.
Oo and some self-toasted sesame seeds. *drool*
