Need some breakfast advice...
I'm trying to eat a lot more veggies and legumes. Any advice for a breakfast with lots of veggies, and very little grains, meat, and eggs?

How about an omlette made with one or two eggs, and lots of diced veggies? The egg will hold the omelette together, and you could easily fit a serving or two of veggies in it.
You could also do something like a tofu and veggie stirfry, if going vegetarian is your goal.
And there's always smoothies: frozen fruit, milk or yogurt, and ice. Protein powder if you like.

Whole-grain pita bread, 1 tablespoon of fat-free ranch dressing with all the veggies. (Lettuce, tomato, peppers, mushrooms, black olives, spinach leaves, etc.) Sunflower seeds are a great addition and give lots of flavor.
The omlette idea is good too. I don't eat eggs but I make these for my kids and pile in the fresh mushrooms, onions and green peppers.
I find it difficult to eat veggies first thing in the morning, but by 10am I can eat almost anything . You might try:
sauteed spinach or swiss chard
veggie soup - I make it from scratch and puree it for my kids. The texture works for breakfast and it's warm and filling
smoothie made with fresh fruit and veggies
Baked beans on whole-grain toast. A traditional English breakfast.

Well.... here I am again: talking about PUMPKIN!!!! Heck yea!!! It's amazingly delicious and perfect for breakfast... same goes for acorn & butternut squash too!
broiled tomatoes, roasted potatoes + bell peppers, potato pancakes with spring onion, baked and mashed parsnips and carrots (or your favorite squash) + cinnamon and maple syrup.
There's no need to eat traditional breakfast foods for breakfast. How about soup? Vegetable, minestrone, lentil. . . Soup is a great breakfast.
If you do want something slightly more traditional, and since you don't want eggs, you could do a tofu scramble. You could also consider an egg-white scramble or omelet if that works for you (with lots of vegetables, of course).
Do you count corn as a grain? Corn tortillas w/ refried beans & salsa would be good, more or less eggless huevos rancheros (though they would be better with a single egg).

I think the tofu and vegetable scramble is a good itdea, with onions, bell peppers, basil and garlic, and on the side have some nice fresh sprouts and fresh slices of tomato. That is a nice veggie breakfast, high in protein too.Its really tasty when you sprinkle in some esame seeds, salt and nutritional yeast (red star - high in b12)
Heres a tip when scrambling tofu use only a small amount of oil, because too much oil wont allow the tofu to get crispy.
You can also make a fake omelette out of chickpea flour and spices, that is a legumey way to to have some veggies. Its kind of like a savoury, tasty pancake think, google it and pick a recipe you like the sound of, I think traditionally they do it in India.
I am a big fan of savoury breakfast usually, sigh, but right now i am just low cal'ing it all the way, so only fortified cold breakfast cereal for me. But now I can have a savoury breakfast vicariously through someone else! :D
How about creamy mushrooms on some wholegrain toast.....
Bigbitty - why can't you have a savory breakfast on your current plan? 1/2c of tofu is about 90 calories (at least, that's the first hit I got when I googled it - I'm sure you could find some that's less) - and even if you cooked it with lots of veggies and ate sprouts & tomatoes on the side, they probably wouldn't add more than 60 or so calories. Cook in nonstick spray - the tofu has some fat, so it's still balanced, and you're at 150 - add in some nutritional yeast and sesame seeds, and you can still be at around 200.
It's hard for me to imagine a healthy weight loss plan that doesn't allow for a 200 calorie breakfast.

Seriously, on my 2000 days, my breakfasts are like 600. lol
