I need cake recipes!
Easter Sunday, April 8, is my birthday and also my Aunt Mary's. We are going out for Easter dinner and then we'll invite people in for cake and coffee.
Aunt Mary wants to order a cake from the supermarket bakery, but I just can't face another one of those with that thick, Crisco & sugar icing.
I've decided to bake a birthday cake, most likely a sheet cake.
I plan to use a classic 1-2-3-4 yellow cake recipe, but it's very rich. It's 1 cup of butter, 2 cups of sugar, 3 cups of flour and 4 eggs, plus a little milk and vanilla. The only substitution that will work is egg beaters for the eggs. The sugar is a must because it's creamed with the butter and that's what gives the cake it's texture and lightness.
More than anything I need an icing recipe. I'd like to do a fluffy, pink icing and trim it in white and light green. I thought that might look pretty for Easter and for our birthdays.
Any cake or icing recipes you have will be very welcome. It doesn't have to be extremely low cal, but it does have to be a typical, vanilla birthday cake (not carrot or chocolate)

i just baked the best cake ever. I made betty crockers chocolate cake mix with just 10 oz coke and it came out more moist and delicious than any cake ive ever had. this works with yellow and white cake mixes too. just add 7 up instead of the coke.
I'm afraid I've never cared for the cake mix/coke cakes. Way too sweet for me! You have all the sugar in the cake mix, and all the artificial sweetner in the coke. Actually, I'm not much of a cake mix fan at all. I like to bake from scratch, mostly because I find it relaxing and fun.
But that chocolate coke cake is really popular, so it must taste good to a lot of people. I'm not putting you down for it at all! In fact, more power to you for trying it!

Maybe you should just search on the web for low-cal cake. I'm sure there must be recipes for angel food cake or if you can't just buy a mix of angel cake from the store.
At Christmas time I went to a little party and they just bought a little bundt angel cake. They filled the center with strawberry ice cream and it was delicious. They also put vanilla frosting with crushed candy canes. that's more christmas-y but you could replace the strawberry ice cream for frozen strawberry yogurt.
