Hey! This is my first post here. Officially, I have been a vegetarian for five months tomorrow, and I'm very pleased with it.

The only problem is that I'm a really picky eater, meaning that I don't like a lot of things (which usually end up to be vegetables and fruits). It's been difficult for me to eat things that aren't really processed because of this.

So I was wondering if you guys would share your favorite veggies (that you think a picky eater might like)? I'd love to find some I enjoy(so would my mom, poor woman)! Thank you in advance!

My absolute favourites are:

- grilled: mushrooms (yummy and lots of protein which you probably need!), zucchini, eggplant, onions, beets, potatoes, garlic

- roasted: peppers, corn, potatoes

- steamed/boiled: okra (this one is the either love it or hate it type), broccoli, cauliflower, asparagus, green beans, spinach, mushrooms, peas, corn, beets, kohlrabi, garlic (develops a nice sweet taste and buttery texture when cooked, so you can mash it and use it as a spread for toast)

- raw: carrots, tomatoes, peppers, cucumbers, celeriac (celery root), lettuce, cabbage, beets, kohlrabi

- pickled (delicious, but watch the sodium!): olives, cucumbers, cabbage, cauliflower, beets, green tomatoes, carrots, peppers

There must be many more I forgot though.. veggies are great!

Yummm...ily51, you're making me hungry!! (Except, what is kohlrabi? Don't think I've ever even heard of that before!)

My suggestion is to get a little creative with your veggies, for instance...who doesn't like mashed potatoes, or mac & cheese?! (If you're a lacto-veg, for that latter) Toss in garlic and broccoli to either of those -- makes them more filling, sneaks your veggies in, and makes them seriously delicious. Also, don't forget about "ethnic foods" -- think about which meals you've enjoyed at Chinese & Indian restaurants, for example, and you can easily start to re-create these in a healthy way at home... Personally, I loooove steamed broccoli with a little soy or teriyaki sauce and lots of crushed red pepper. You can also find recipes for your own veggie tacos and burgers / patties... using whichever veggies you do like (carrots, peas, and corn are great to sneak in here...I made black bean & sweet potato patties the other night.)

Also remember that as you gradually eat less and less processed foods, the taste of fruits & veggies will become more and more appealing to you; you'll start to experience their natural sweetness / flavors. So even though you are a picky eater, keep experimenting with those veggies and you might start to appreciate and even crave them. Sounds crazy, but I can vouch for this!

My personal favorite is a fresh herb salad, raw tomatoes cut up, and raw snow peas mixed together. Add some lemon juice, sea salt, and black pepper. To get your protein in, add some chick peas or edamame beans. Not sure if the salt and lemon juice is for everyone, but you should try it!

Steamed veggies with some Mrs. Dash is also quite delicious. Also, have you tried tomato sandwiches? Spread a little bit of mayo on the bread, put slices of tomato on, sprinkle salt and pepper if desired, then put it together and try! You might like it. Oh, and if you eat eggs, it's worth it to throw some broccoli, cauliflower, and/or onions into an omelette. Let me know if you tried any of these!

elizaveta, the kohlrabi is a light veggie that has a consistency similar to red beets, only a bit crunchier and a bit less sweet - roughly a carrot-like level of sweetness.

I usually peel it and slice it thinly and munch on the slices. It also tastes lovely in soups, my mom cuts it in french fry-like strips and tosses it in the pot.

Come to think of it, I think it would go amazingly well in a salad, diced, sort of like apples. Must try this. :)

I learned how to eat veggies through indian food.  Try gobi aloo or gujerati vegetables (this recipe is for green beans, but it's also really good with broccoli or asparagus).

if you went veggie (good for you!) but are still missing some "meaty" options, I would suggest Portabello Mushrooms. They're delicious, and have a WONDERFUL "beefy" taste. Nothing makes my family happier than when I make stuffed portabello mushrooms! 

My kids also LOVE the vegetarian meat alternatives! Morningstar, Boca and other brands make wonderful meatless alternatives to everyday favorites (like chick'n nuggets and even corn dogs!) A bonus to these, is that you get to feel like you're eating something "naughty" or fattening, but in reality, you can eat 2 of the morningstar corn dogs for the price of ONE regular corn dog (and there's no meat!)

I get a lot of my protien in the morning w/ an eggwhite and mushroom omlette. Top that with a bit of reduced fat swiss cheese ::drools:: mmm heaven!
