I have pumpkin and I have regular waffle mix.  There are a million recipes out there on the web for pumpkin waffles but unfortunately none that simply use a mix.  Would anyone have a good guestimate on how much pumpkin (or anything else you think I should add) to make the minimum serving from a box of waffle batter mix?

What's the serving size on the waffle mix? A half cup or thereabouts?  If so, I'd start by adding 1/4 cup pumpkin and maybe a little water to thin the batter.  If you don't like the consistency, you can always add a little more pumpkin.

I would also separate the eggs you use in the recipe (assuming your mix directs you to add eggs), beat the yolks in with everything else, but beat the whites to stiff (but not shiny) peaks by themselves, then gently fold them into the rest of the batter. This is great for any waffle, but since you're adding another wet ingredient, doing this will help provide some additional lift to your waffles.

Usually any recipes that come with the mix say to add 1/4 cup of whatever you are adding to recommended size of mix recipe.  Works with anything...berries, applesauce, choco chips, etc.

You could also just use the mix in place of the dry ingredients in a recipe, then incorporate the pumpkin in the wet ingredients by substituting it for the milk or water and the fat/oil.  Just make sure the total measures for both dry and wet are the same as the recipe.  You can do that more easily by converting the measurements to grams, then adding up the flour, baking powder, sugar etc. and measure out that total amount of mix.
