Okay, so I've been around awhile, seen this post a million times, responded to it 1/2 a million times, but here I am.
I am sooooo sick of egg whites I could just die, just need some new yummy recipes for eggs (preferably whites) or some good protein ideas (vegetarian of course) that are not too high in fat or cals or sugar. Anyone have anything they particularly like? I do a protein shake 1-2 times a day, chili w/beans and soy protien, etc.
I am at about 1900-2000 cals maintenance (very hard to eat that much, sometimes I do not get there), and want about 30% protien. HELP please!!!!!

I make egg whites all the time...nothing too exciting because, quite
simply, my parents do not buy exciting food. I like to make egg
whites scrambled with peppers, onions, broccoli, tomato, maybe some
salsa, or some mushrooms to spice it up a bit. Sautee the veggies
a bit and just pour in the egg whites, and cook 'em up! I know,
not very exciting, but its quick and easy. Some of my friends
make scrambled egg whites with spinach...I think its weird, but I
dunno, it could be good!

Have you tried chickpeas (garbanzos) and there is a lot you can do with Garbanzo flour, like making muffins and pancakes. Look for the Bob-mills products in the health food store.

Greens, beans, nuts and seeds... This is what I inform vegetarians to eat on a daily basis. Beans ( and bean alternates ), nuts and seeds will give you the protein that you are looking for and the proper types of fats. Try to have something with protein with each meal. For example, you could have toast with cottage cheese and soya beverage to drink. You could have an apple with mixed nuts on the side. Another suggestion is cooked greens, tofu, noodles and hemp seed. Try different things too... Try edamame. Try cuisines that have a higher focus on vegetarianism like East Indian or Thai cooking. There are cultures that have developed vegetarian diets for hundreds of years. Finding out more about these cultures will help you tons.
Chickpeas is one thing I would definitely suggest. If you want to make a hummus which is a middle eastern spread you can they are full of fiber. In about a cup there is 19grams of fiber...high calories but that's what happens with high fiber and high protein. There are a ton of other legumes you could buy and also a ton of beans. If you eat fish at all...I make a tuna surprise with whole wheat pasta black beans, red kidney beans low fat cheese you could use a veggie cheese...it's awesome if you wanna know more let me know.
I do not eat fish, no meat at all, but I like your tuna recipe, do you have any good egg recipes? I know about hummus, etc. I am a long time veggie (20yrs, 10 of those vegan), just BORED with the same old thing!!!!!! Would love some new ideas.
I have a great protein shake made of hemp which has all the essential fatty acids. Also, rice protein is good. As far as whole foods, I say beans are the best (nuts are as well, but contain more fat). Eat a cup of beans a day and you will get enough protein and all the other benefits! I enjoy eating them straight out of a can, but I also enjoy adding some dressing I make (some lemon juice, pepper, mustard, maple syrup, red wine vinegar and salf-free seasoning of your choice) and add that to the beans. Also, sprincle some hemp seeds or flax seeds on top!
Refried Beans in Corn Tortilla: either use non-fat refried beans or make them yourself from a can of beans... just heat the beans in a pan with a little of liquid, mash them as you're heating them... spread bean mixture on a corn tortilla, pan fry on a cast iron pan until the tortilla is soft enough to fold over... then continue to fry until the tortilla is crisp and brown, I use a teaspoon of oil on the pan and include it in my calorie count... and of course you can add jalapenos or onions to the mix as well...
falafel!!! in case you didnt know, falafel is a puree of chick peas and fava beans i think. buy a mix from the grocery store: near east makes the most nutritional type (10 g protein and 100 cals per serving) and gives directions on the box for a way of broiling them as opposed to frying. they are soooo tasty wrapped up in a whole wheat pita with yogurt sauce, cucumbers, and tomatoes.
If you eat fish, try canned salmon. It has a much milder flavor and I can eat it plain, as opposed to tuna which is so strong (even the white albacore) that I really get tired of it after a few bites. Also, try buying tuna steak, or salmon steak, and preparing those with spices etc. (broiled would be good). Here's a good easy one by Rachel Ray:

If you don't have anything against it, I suggest imtation crab meat. It's a little on the high side in sodium, but it's super high in protein.
Have you ever made a fritatta? It's like a cross between an omelet and a quiche.
Cook all the ingredients you want to go in it (I use all kinds of vegetables) in a pan that you can slide into the oven. Beat egg whites until foamy, season and pour over the hot filling in the pan. Let it cook on very low heat for a couple of minutes, then top with cheese and slide it into a preheated broiler or oven and bake until the cheese is bubbly, the eggs are cooked, and it's golden on the bottom. Slide it onto a plate and cut in wedges to serve.
I add a dash of turmeric in my egg whites to make them a more attractive yellow color.

hmmm - can't help with the egg whites - I eat them all the time too (and still love them).
However, tofu is a great alternative. The other day, I took smooth tofu and added cinnamon, allspice, nutmeg, and a touch of molasses. It tasted just like pumpkin pie! It was so delicious I ate almost an entire tub.
I tend to have weird tastes - but someone else might find this yummy too!

my personal favorite are edamame with a little sesame and sea salt sprinkled on top. great snack, lots of protein. yummy.

I recommend north Indian style dahl. I make it with tiny red
lentils, onions and spices. It's quick/simple to make and the
lentils are a nice source of protein.
Home made seitan is one of my favorites, very high in protein:
Mix 1 1/3 cup vital wheat gluten (find it in the baking isle) with 1 cup water, kneed together for a few minutes, roll into a 2 inch diameter strip, cut into 1/2 inch slabs. Drop into boiling vegetable broth for a few minutes, and then lower to simmer for an hour. Store it in the broth in the fridge till you want to use it.
It's good sliced into strips for wraps with greens and avocado, or cut into little bits and mixed with brown rice and soy sauce. It's actually a very versitile meat substitute, those are just my two favorite uses. Its takes some time to mix up a batch, but it stores so well you can eat it over a week or two.
