Someone up there must have an amazing (and well-tested) muffin out there?

I've tried some with honey/applesauce/etc but usually end up too runny / falling flat. My husband insists they are good but I think he is just being kind......

Looking for a regular-sized one, natural ingredients.

When I make muffins with applesauce, I usualy eat them on the first day so they don't get stale or freeze them. I can cut the calories down by doing a couple of things (in a regulat recipe):

Use less sugar, but use demerra (raw) sugar- its tastes more ... sugar-y

Instead of the milk, use pureed ff cottage cheese (makes the batter thicker, and helps the muffin along- more calories, but a TON of protein)

Use all egg whites and one egg

Replace 1/3c of the flour with a pureed high fiber cereal (no more... I've tried it- ew)

And the classic applesauce-butter switcheroo

 

What does the recipe you changed look like? It might be the type of muffin recipe (cake based rather than quick bread based, where these substitutions work best)

someone posted a quick muffin recipe, 94 cal, but they were very small.  I tried them and loved them.

box of butter pecan cake mix and 1 can of pumpkin. (not the pie filling).  Make 24 muffins.

With most muffin and cake recipes, you can substitute applesauce for *all* of the wet ingredients rather than just the butter or oil.
I don't know of any from-scratch recipes off hand, but I love Fiber One apple muffins made with applesauce.

hey, I totally understand your troubles with muffins not rising properly!! It happens to me alot! However, just last week, I made a recipe that really rose! They were regularsized muffins ranking at 87 cals/muffin!! I LOVED them. They are minimally sweet, so if you want a sweet muffin, you may want to add more sugar, splenda, or even mashed banana would be wonderful (but beware the extra calories this adds). You can play around with this one especially with the fruit. But when made as this recipe says, they turn out wonderfully! They are even better the next day. I kept mine in the fridge. They were excellent cold, or warmed in the microwave! Enjoy!!

 

Blueberry Bran Muffins

1 1/2 cups wheat bran

1/3 cup skim milk

2/3 cup water

1/2 cup applesauce

2 egg whites

1/5 cup brown sugar

1/2 teaspoon vanilla extract

1/2 cup all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

1 cup blueberries 

 

DIRECTIONS

Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or use paper muffin liners.

Mix together wheat bran and milk and H2O, and let stand for 10 minutes.

In a large bowl, mix together applesauce, egg, brown sugar, and vanilla.

Beat in bran mixture.

Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.

Stir into bran mixture until just blended. Fold in blueberries.

 Scoop into muffin cups.

 Bake in preheated oven for aprox. 15 min.  ready as soon as toothpick inserted in center of muffin comes out clean!!

It is about 140 calories per muffin, but you could probably substitute splenda for the sugar to bring down the calories.  I found these to be a little sweet, so you could also probably reduce the sugar.
