I need squash advice

So I just recently found the joys of butternut squash, but I'm having trouble.  The first thing I tried was fries, man what a pain in the neck!  I put them on the cookie sheet and the ones near the edges burned and the center ones were still mushy and not crispy.  Last night I grated the squash on the cheese grater and made has-browny stuff.  I had the same problem with burning.  What can I do different?

I've only ever had butternut squash prepared in a way that sounds exactly like the name. it was chopped in a dish and had butter, walnuts, and brown sugar on it. Since that's super unhealthy, I'd probably bake it with some ICBINB spray, real maple syrup, and your choice of chopped nuts on top.
I'd stop trying to treat the squash like a potato and look for recipes FOR Butternut Squash :)

Well, those recipes were kind of treating the squash like a potato.  Butternut squash has a good bit of sugar, so that explains the burning. 

My favorite way to cook it is braised with onions.  Saute lots of onions, combine with diced squash in a casserole dish, pour in some broth, cover and bake for an hour at 350 f, adding more broth if needed.  It lends itself to many different seasonings such as curry or chili powder, cinnamon and nutmeg, or just plain old salt and pepper.
