Recipe Ingredients for Neighborhood Bean Soup - Veg

2 cup dried black beans
3 cup vegetable broth
2 cup water
1 cup tomato juice
1 tsp dried thyme
1/2 tsp dried marjoram
1/2 tsp pepper
1/4 tsp rubbed sage
1/4 tsp dried savory
1/2 medium onions, chopped
4 medium carrots, chopped
1 cup celery, chopped
2 cups collard greens
3 cups kale
1 cup zucchini, chopped

Recipe Directions for Neighborhood Bean Soup - Veg

  1. Place beans in a soup kettle; add water to cover by 2 inches. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for one hour.

  2. Drain. Add broth, water and seasonings; bring to a boil. Reduce heat; cover and simmer for 2 hours.

  3. Saute onions, carrots and celery in oil; add to soup. Cover and simmer 1 hour longer. Debone ham and cut into chunks. 10 servings
