A new way (for me) to fix an omelette
At least once a week I have a whole egg vegetable omelette for breakfast and another two days I have an egg white omelette. My favorite is spinach, mushroom and onion, sometimes with bell pepper. It takes a while to saute the vegetables to my liking so it's not a quick breakfast.
However, after this morning it will be quicker. I am sauteeing the onions and mushrooms in a teaspoon of olive oil. I'll add the spinach later. This will make enough to fill at least 3 omelettes. I'll be able to measure out 1/2 cup of the filling, heat it up and add the eggs.
Now it's a quick breakfast!
What's your favorite low calorie, healthy omelette? Do you use real eggs or egg substitute?
Yum! I use the same method to save time for cooking dinner during the week- usually for stirfries and the like.
I use real whole eggs. My usual omelette below with 2 whole eggs-
- diced bell peppers
- diced onions
- spinach (either frozen or fresh)
- shredded mild cheddar cheese
- canadian bacon
- mushrooms
Very filling!
I eat an ommlette of egg whites, smoked salmon and fat free cheese a lot. Sometimes I go the veggie route too.. love onions/mushrooms.
Today I put on egg beaters (I'd rather use whole with a couple whites to every yolk, but I'm out) and went in search of veggies. Surprise, surprise, I was all out of those too. xD So I put in a wedge of laughing cow light cheese and a clove of minced garlic. It was actually pretty good, though I'm sure it'd have been better if the garlic had had more time to brown. I didn't notice the cheese since it mixed in, but I think it might've changed the consistency a bit. Not enough to be worth the cals though.
Moral of the story: Garlic + Eggs = Good
Also, I need to go grocery shopping. Ahaha.
Also, once your veggies are sauteed and you mix them with the egg, you can dump it in a ziploc bag and put it in boiled water for 12 minutes and it brings out a mess-free omelet.

I usually have these on the weekends since I'm not pressed for time in the a.m. or even during the week for dinner if I'm already close to my calorie limit.
I always mix a couple tablespoons of cottage cheese (regardless of the other ingredients, it makes the eggs creamier in my opinion, and who can't use more protein?) into the egg beaters before dumping it into the pan but these are some other things I add:
- spinach, onions, mushrooms and deli turkey
- black beans, corn and spinach topped w/salsa
- plum tomatoes, spinach and black pepper
- frozen medley of pepper strips (red, green, yellow & orange)
- turkey dogs
- zucchini and garlic
- leftover roasted potatoes and spinach
- leftover lobster or crabmeat - on the rare occasion there even are any leftovers!
- pretty much any kind of leftovers, within reason :)
MMMM - I LOVE my morning omelette! I don't saute my veggies, it takes too long. Besides, I usually go with sweet peppers and/or mushrooms and unlike onions arent so ''ucky'' crunchy in a cooked omelette. I just chop everything up and throw it in a bowl with the raw egg/egg white and beat it and dump it in the pan that way (cover)! Here's how I make MINE:
1 whole egg
3 egg whites
2 slices reduced fat cheese (usually provolone or cheddar/one of each)
red/yellow/orange sweet peppers diced (maybe 50 grams)
and a serving of ketchup on the side!
I have a scale that measures things by the gram, so I know exactly how many grams of egg white and pepper i'm getting whenever I make an omlette - anal right? But, what the hey, it works for me!
I usually have a cup of coffee with this that has 2 servings of fat free half and half and maybe 15 grams of Whey low granular(sugar made healthy!)((tastes awesome too!))
PLUS on occasion I'll have a serving of reduced sodium/fat bacon on the side too! --- If I have the omlette, bacon AND coffee, my whole breakfast is usually under 400 calories
In a large bowl, put 1/2-1 cup asparagus, spinach or other veggies, 1 tsp crushed garlic, 1 tbs olive oil and microwave 2-3 minutes at 50% power.
-meanwhile mix 2 eggs and 2 oz yogurt.
-add feta cheese to veggie dish, cover with egg mix; top with parmesan cheese, onion salt, pepper and microwave for 4 min at 50% power.
Not sure if this is an omelette, fritata or crustless quiche but it is quick and good.
Sometimes I use just 1 egg and egg beaters and other cheeses.
i've discovered the delicious amazing joy of an omelette with RICE and veggies for beakfast
- 1 whole egg
- 1 egg white
- 1/4 cup brown rice
- green beans, peas, corn or other veggies
i fry the riuce so its crispy in olive oil wiht the veggies, and then pour the eggs over top... very veeeery good, except when i put salt on, but salt makes it so muh better!
The omelette with rice is actually a popular Korean dish. It's definitely tasty...
I love omletts, but eggs do not fit my diet :(
nix the yolks, and they are SUPER low cal!
