Let's check something.

Is 1200 the right amount of calories for you? Or just a number you picked because its the absolute minimum a woman needs? I'm asking because you may not be eating enough.
Are you getting a good amount of protein and fiber?
When is your last meal before bedtime? When is bedtime?
Do you drink enough water during the day?

1200? at 5'6"?
Really?
How much do you weigh now and how much do you want to weigh?

i havent woken up hungry, but when i eat early and stay up late i find myself hungry before i go to sleep sometimes... at this time i ususally chug a few glasses of water to fill me up. i find that green tea helps too if im still hungry. you can prolly also get away with half a glass of low-fat skim milk, this helps two ways because milk helps me sleep and its protein.
I have this happen to me too. It's usually on days that I either underestimated my calories in, or my calories out.
For example, last week I went shopping for 6 hours straight. I didn't log this as an activity, but when you think about it, yeah, that burned a lot more calories than my usual day hanging out at home in front of the computer. And then there was the day that I spent thoroughly cleaning my house... more than just the usual clean: I did a spring cleaning/declutter that lasted 5 hours.
Both those days I was so much more hungry and couldn't get to sleep at all, not until I had a small snack. Then I was out like a light within minutes. What's more, my weight was lower in the morning.
For snack I had 1 cup of plain low-fat yogurt. Perfect option because it has a bit of protein, a bit of carbs, a bit of fat, and also meets needs for dairy. :-)
