Non-Fat Oatmeal Fiber Cookies Recipe

Oatmeal cookies with extra fiber from Fiber One (Brand) cereal. No fat using applesauce and low sugar using small qty of Splenda (Brand),

Ingredients
2/3 cup applesauce
1/2 cup Splenda
1 egg white
1/2 teaspoon vanilla extract
1/4 cup Whole Wheat flour
1/2 teaspoon baking soda
1 cup rolled oats
1/2 cup Fiber One

optional:
1/2 teaspoon Spices (nutmeg, cinnamon) to taste
1/4 chopped nuts
Directions
  1. Preheat the oven to 375 degrees F (190 degrees C).

  2. In a large bowl, blend together the appplesauce and Splenda. Beat in the egg white, then stir in the vanilla. Combine the flour and baking soda; stir into the sugar mixture. Mix in the rolled oats and Fiber One; add any optional ingredients. Drop dough by teaspoonfuls onto ungreased cookie sheets.

  3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 1 minutes before removing to a wire rack to cool completely.
