Oatmeal cookies with extra fiber from Fiber One (Brand) cereal. No fat using applesauce and low sugar using small qty of Splenda (Brand),
| 2/3 | cup applesauce |
| 1/2 | cup Splenda |
| 1 | egg white |
| 1/2 | teaspoon vanilla extract |
| 1/4 | cup Whole Wheat flour |
| 1/2 | teaspoon baking soda |
| 1 | cup rolled oats |
| 1/2 | cup Fiber One |
optional: |

| 1/2 | teaspoon Spices (nutmeg, cinnamon) to taste |
| 1/4 | chopped nuts |
- Preheat the oven to 375 degrees F (190 degrees C).
- In a large bowl, blend together the appplesauce and Splenda. Beat in the egg white, then stir in the vanilla. Combine the flour and baking soda; stir into the sugar mixture. Mix in the rolled oats and Fiber One; add any optional ingredients. Drop dough by teaspoonfuls onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 1 minutes before removing to a wire rack to cool completely.
