Recipe Ingredients for North African squash and chickpea stew

2 tbsp Vegetable Oil, Canola
2 large Onions
2 clove Garlic
1 stalk, medium (7-1/2" - 8" long) Celery
1 tsp Pepper, Black
1 tsp Turmeric, Ground
0.5 tsp Cinnamon, Ground
0.5 tsp Ginger, Ground
100 grams Red Lentils
1.8 Can Chick Peas
1 tbsp Saffron
500 grams Passata Italian Sauce
1 cup Parsley
40 grams Coriander
300 grams Squash, Winter, Butternut
1200 grams Vegetable Stock
1 tsp, crumbled Bay Leaf
50 grams Orzo Dry

Recipe Directions for North African squash and chickpea stew

  1. Heat the oil in a large saucepan over a medium heat. Add the onions and sauté until just starting to turn golden. Turn the heat down to medium low and add the garlic, celery, pepper, turmeric, cinnamon and ginger. Sauté for a couple of minutes.

  2. Now add the lentils, chickpeas, saffron, tomato sauce or passata, parsley and about half the coriander. Cook over a low heat for 15 minutes.

  3. Meanwhile, peel and deseed the squash or pumpkin and cut into a large cubes. Add to the pan with the stock and bay leaf. Cover and simmer gently for about 30 minutes. Add the pasta and simmer until it is cooked. Season with salt and pepper to taste.

  4. Serve immediately, scattered with the remaining coriander leaves and with a few dates on the side, if you like.
