Great Grandma Anna Floden's recipe. Handed down by father-in-law Lester "Ted" Floden. Count is for 2 Kumla and 3 oz ham

Recipe Ingredients for Norwegian Kumla

5 lbs red potatoes
2 c white flour
1 c graham flour
1 1/2 lb Boneless Smoked Ham(pit style)

Recipe Directions for Norwegian Kumla

  1. Boil ham in a large(canning)pot for about 2 hrs, med. heat. Use enough water to cover the ham. Remove ham from pot.

  2. Peel and grind the potatoes. Use an old fashioned hand grinder as that is what Anna used.

  3. Mix the potatoes and flour together and with your hands make balls about the size of a tennis ball, 16-18. If the potatoes are wet you can add 1/4 c more of the white flour so the balls hold together.

  4. Drop the balls into the ham stock and cook for 1 to 1 1/4 hrs. Medium heat, do not boil.

  5. Gently nudge the pot from time to time and let them float to the top. Also with a wooden spoon, or other utensil gently nudge the Kumla on the bottom of the pot to keep them from sticking. Kumla are done when they float.

  6. You can leave them in ham stock till ready to serve.

  7. Cut the balls into bite size pieces and eat with butter.
