Recipe Ingredients for Nutty Quinoa Salad

1 cup quinoa
2 cups water
1/2 cup golden raisins (9297)
1 tablespoon (up to 4 Tablespoons) sesame oil
3 scallions, sliced
75 g (1/2 cup) peanuts, dry-roasted with salt (16090)
1/2 cup canned mandarin orange sections(92269), drained (or 1 orange cut into sections plus 1/4 cup orange juice)
2 tablespoon chopped fresh mint leaves or parsley
2 tsp. grated orange zest (9216)

Recipe Directions for Nutty Quinoa Salad

  1. Combine the quinoa and water in a large saucepan and bring to a boil. Reduce the heat, cover, and simmer for 10 min.

  2. Add the raisins and continue cooking until all the liquid has been evaporated, about 5 min. Remove the pan from the heat and spread the mixture out on a baking sheet. Let it cool completely.

  3. In a large bowl, combine the quinoa and raisins with the remaining ingredients. Add salt to taste. Toss gently and serve.
