Recipe Ingredients for Nutty Quinoa Salad
| 1 | cup quinoa |
| 2 | cups water |
| 1/2 | cup golden raisins (9297) |
| 1 | tablespoon (up to 4 Tablespoons) sesame oil |
| 3 | scallions, sliced |
| 75 | g (1/2 cup) peanuts, dry-roasted with salt (16090) |
| 1/2 | cup canned mandarin orange sections(92269), drained (or 1 orange cut into sections plus 1/4 cup orange juice) |
| 2 | tablespoon chopped fresh mint leaves or parsley |
| 2 | tsp. grated orange zest (9216) |
Recipe Directions for Nutty Quinoa Salad
- Combine the quinoa and water in a large saucepan and bring to a boil. Reduce the heat, cover, and simmer for 10 min.
- Add the raisins and continue cooking until all the liquid has been evaporated, about 5 min. Remove the pan from the heat and spread the mixture out on a baking sheet. Let it cool completely.
- In a large bowl, combine the quinoa and raisins with the remaining ingredients. Add salt to taste. Toss gently and serve.
