Oatmeal Pumpkin Pie
A similar recipe was posted a couple months ago. Here's my take on it:
6 egg whites
1 cup old fashioned oats (NOT the quick cook kind)
1 cup pureed pumpkin (NOT pumpkin pie filling)
6 packets Splenda Hazelnut Flavors for Coffee
Cinnamon to taste
Mix all the ingredients until throughly combined, then pour into a pie pan that has been sprayed with nonstick and bake at 350 for 20 min. It came out really moist and fragrant, and was very filling. I figure the whole pan has about 452 calories, so cut into 4 big pieces it's 113 cals per slice. I had it for breakfast with fruit on top, but it would probably be great spread with a spoonful of peanut butter. Hope you like it.
ok right now as i am typing my oatmeal pumpkin pie is in the oven! but would I be able to make this with only 3 whole eggs. it kills me to have to use only the egg whites and then throw out 6 yolks. It just seems so wasteful. maybe I can make scrambled eggs with them next time I make this stuff.
But back to the main question would 3 whole eggs work or even just 4 egg whites?
Edit: Ok I tried it and im must be the only one not too thrilled. Its just too eggy and bland. I think Im going to try it with one whole egg and a few tables spoons of fat free milk to give it a creamy taste and try it with the splenda (I used sugar) I also forgot to put vanilla in it also so thats probably why its bland to me.

Yup, you can make it with 2 packets of instant flavored oatmeal if you'd rather. I would leave out the Splenda and/or sugar if you do that.
Gem: I haven't tried to make it with whole eggs. I just don't like yolks. You would probably get a richer taste if you used whole eggs though. Don't forget to put some cinnamon in it, or hey, maybe a spoonful of coffee creamer? Some Hungry Girl recipes call for coffee creamer to create a richer flavor. Let us know how it turns out.
yea I did put about a tablespoon of cinnamon in and a tsp of nutmeg but i think I will try it with a whole egg and maybe a few tablespoons of some LF milk. Im the opposite of you, I dont really care for egg white especially in that amount. but I still have plenty of pumpkin and oats left I can go for a 2nd batch.
This might be a silly question, but I use cartons of egg whites instead of cracking an egg and extracting the whites that way. What would be the equivalent of one egg white when it's from a carton? A tablespoon?
Mmmm. For this recipe, I'd guess 6 egg whites to be 1/2-3/4's of a cup. Hope that helps.

Tried this today. It was very bland. I'm sure there are ways you can add more flavor. Maybe I will try it again sometime.
hmmm, gingin, I tried it with the banana weight control oatmeal and that was bland. Perhaps (if you do not mind the processed too much) try the Quaker Weight Control Oatmeal - Maple and Brown Sugar. Amazing to smell while baking and so very tasty! Try it. : )
I made this and I did not like this one bit. It was food - that's it. I was expecting a treat.... and this was not it.
I made it with Maple & Brown sugar and a little vanilla. Yuck. I rather have had just the oatmeal.
I loved this! I halved it and made it in the microwave for breakfast and topped it with sugar free maple syrup. Delicious! Thanks!
I'm thinking of trying this! Except I want to try pumpkin spice and cinnimon + splenda and the oats and pumpkin. Pheww that was a mouth full. I have a can of pumpkin and didn't know what to do with it. Sounds delicious!
I'm eating as I type. I added pumpkin spices and used 1/8 cup brown sugar and 1/8 cup splenda. I topped it with sugar free maple syrup.

I tried it with Maple and Brown Sugar one, and I don't know if it because I burned it a bit but the taste was pretty bad. I ended up throwing most of it away. :( I might try it with non flavored oatmeal and add regular spices. I was also thinking of using Stevia in combination with sugar, any experience with baking with Stevia?
