Oatmeal & Yogurt Muffins Recipe

A- / low fat & low cal / i really like this recipe as a basis, then i add walnuts, chopped apple, raisins, whatever i feel like! and so easy!

Ingredients
1/2 cup oats
4 oz fat free yogurt
1/8 cup unsweetened applesauce
1 tbsp brown sugar
1/2 banana, mashed
2 egg whites
1/2 cup whole wheat flour
1/16 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
Directions
  1. Mix the yogurt with the oatmeal and let stand for 1 hour.

  2. Mix applesauce, sugar and mashed banana.

  3. Mix applesauce mix with oatmeal mix.

  4. Sift the dry ingredients into the oatmeal mix.

  5. Beat the egg whites until they form stiff peaks and fold into batter.

  6. Spoon into 5 muffin cups.

  7. Bake at 180°C for 20 minutes.
