How should you come off a diet?

I'm eating around 1200 calories a day in order to lose 50 pounds.  According to many sites, to maintain at my ideal weight, I need to eat around 2100 calories a day. But I was wondering, if it necessary to increase your calories gradually or should I simply go from 1200 to 2100 in a day?  Wouldn't I suddenly gain some weight back?

When you reach your goal weight, switch to the Intuitive Eating method of weight control, which relies on your signals of hunger and satiety to regulate your intake.  Experiment with eating the food you prefer in portions that will satisfy your hunger for 4 to 5 hours.  If you are hungry sooner, eat a small snack, but if you are not hungry, eat only a small amount at your meal.  Keep track of everything you eat, and log your food at the end of the day to see how close you came to your maintenance calorie goal (1900 calories a day for you).  Keep experimenting until you get it right.
