Anyone have good organ recipes that does not involve frying?  Looking specifally for liver, kidney, spleen, and heart ideas.

There has got to be other offal eaters here.

If not, there should be!  Eat your liver kiddos!

Good comfort food...chicken giblets and rice.

Simmer chicken giblets (and hearts, if you want) til tender.  Season with sage, parsley, and a touch of salt...or however you season chicken soup.  You can also add onions, celery and carrots.

With a slotted spoon, take out the giblets and let them cool.  Meanwhile, measure out enough of the stock to make rice the way you normally do.  (I like brown rice.) 

Cut up the giblets...I like them in large chunks.  When the rice is cooked, stir them back into the rice. 

Not sure about the calorie content, but it sure tastes good on a cold day.

My family makes soup with chicken kidneys and hearts.  Along with the chicken parts (bone-in), we simmer with shiitake mushroom, goji berries, and green onion.

Liver with peppers & onions in a spicy tomato sauce

Pat the slices of liver dry with paper towels and dredge in seasoned flour.  Pan sear in a non stick pan until golden on both sides.  Remove from the pan and set aside on a warm, covered plate.  The liver does not need to be completely cooked at this point - it will finish cooking in the sauce.

Add 1 tablespoon of olive oil to the same pan.  Put chopped red and green bell peppers and chopped onions into the pan.  Saute until soft and golden around the edges, using the moist vegetables to pick up all the cooked on bits in the pan.  Add 1/4 cup of bottled chili sauce and heat to simmering. Taste and season.  Cut the liver into bite size pieces and return to the pan to finish cooking and absorb the sauce. 

I've had liver haters eat this and like it. 

Pepper Pot Soup

This is a Philadelphia favorite made with veal and beef tripe.  The recipe is very old. 

Unfortunately, my favorite way to eat liver is to wrap it in bacon and bake it. I haven't looked up the calorie count of this, but I'm guessing it's up there : ) Though on the plus side, they're heavy enough that you only need to eat a few.
