Oh My god cupcakes!!!!

So I have a MAJOR chocolate sweet tooth! I have been searching for chocolate recipes that are satisfying and a big enough portion size that I actually don't NEED to eat three or more......So I searched the recipes here and found diet cola cupcakes!! It is boxed chocolate cake mix and one 12 ounce diet soda. Mix those together then bake as directed on the box. Makes 24 cupcakes.  I used diet cream soda...AMAZING!! There is something like 90 calories per cupcake, but I made 12 instead of 24. They are huge, and UNBELIEVABLE!! They are so moist, and very chocolatey....So what I did was take the cupcake ( 180 calories because I doubled up the portion size) and cut it in half horizontally, then I scooped in 2 TBSP Fat Free Cool whip and put the top back on.....WOW!!! Under 200 calories and you wouldn't know they were diet...These are now a staple in my house!!!!! ANd think of all the combinations....vanilla cake mix with diet root bear ( root beer float anyone???)... vanilla cake mix with diet orange soda ( creamsicle anyone???)

Just thought I would share. I am a big believer in dessert EVERYNIGHT , so this is perfect!!!!

Yum. I never thought that diet soda thing really worked. I've yet to try it. Diet cream soda? That sounds delicious! Thanks for sharing.

I tried Spice cake with diet cream soda, and then I put cinnamon and nutmeg in the cool whip.... and I tried the root beer float ones....FANTASTIC!!!!

I want to try making something like this from scratch :) I will report on the results :)

Actually, making regular cocoa cupcakes from scratch is in fact slightly lower in calories depending on your recipe, and not a lot more time consuming. This is without any chemicals or artificial sweetener too. :) I have a chocolate muffin recipe that comes up to about 150 calories per regular 12-batch muffin, that is to say 75 calories for a 24-batch. It is really just a chocolate cake recipe poured into muffin pans, so it makes quite a lovely, delicious cake too.
