Sphaghetti squash! i juststuffed my face with a big plate of mock pasta, alfredo sauce, shrimp and broccoli for about 350 calories, with how much sphaghetti squash i ate i think if i used pasta i'd be around 900 calories! i love it! i just made it for the firsttime today and though it took some time to prepare, one somewhat small squash made enough pretend pasta for me to have this meal probably three times. it is so amazing, and i actually really like the taste. well, its no pasta, but nutritious, low cal, and low carb enough that i could forget about pasta forever

Spaghetti Squash is an old favourite of mine. A quick way to cook it is to cut the squash in half lengthwise and place both halves, skin side down, in a casserole dish, pour 1 cup of water over and around the squash, cover with plastic wrap (leave a small vent hole) and microwave for about 15-20 minutes. Cooking time will vary depending on the size of the squash. When done, scoop out the seeds and scrape out the "spaghetti" with a fork. If the squash is small, you can eat it right out of the shell! It is equally good mixed with low-fat margarine and salsa.
does it cook well in an oven? and can you find it in normal grocery stores? i always hear about it but never see it
It does cook very well in the oven - put it in whole but make sure you've stabbed it a few times with a BBQ fork and place it in a dish with about 1 cup of water in the bottom. Cover with foil and bake - usually at least 1 hour.
You should be able to find spagetti squash in just about any grocery produce department or find a local fresh veggie market.

I've always been leary of trying to cook squash of any kind though, and I don't have a microwave (gasp).

I nuke them whole, easier than trying to cut a raw one in half. It takes a bit longer that way, but the heck, I can wait the 15 minutes or so.
Just remember to poke some holes in it first so it doesn't explode or something!

Somehow I have never thought to use alfredo sauce with spaghetti squash, even though I eat it regularly, and I love alfredo. I must try that soon!
I LOOOOOVE spaghetti squash with my whole heart. I had some ground turkey mixed with regular pasta sauce and lots of garlic the other day, and thought I was in heaven. I'm going to buy more too.
Anyone know the best way to store a whole, uncooked squash? They're cheap and in season right now, so I want to buy a few to keep on hand.

Spaghetti Squash can be stored at room temperature for about a month. After cutting, wrap in plastic wrap and refrigerate up to 2 days. Spaghetti squash also freezes well. Pack cooked squash into freezer bags, seal, label and freeze. Partially thaw before re-using, then steam until tender but still firm, about 5 minutes.

I REALLY REALLY do not like the taste/flavor of squash... Does this taste like it? Granted the only times that I remember eating it was with brown sugar and butter on it... but even without that on it it seemed really sweet...
