Sphaghetti squash! i juststuffed my face with a big plate of mock pasta, alfredo sauce, shrimp and broccoli for about 350 calories, with how much sphaghetti squash i ate i think if i used pasta i'd be around 900 calories! i love it! i just made it for the firsttime today and though it took some time to prepare, one somewhat small squash made enough pretend pasta for me to have this meal probably three times. it is so amazing, and i actually really like the taste. well, its no pasta, but nutritious, low cal, and low carb enough that i could forget about pasta forever

I just tried spaghetti squash for the first time and it is a great pasta alternative. I was really impressed. I didn't like it so much with marinara sauce on it because the squash was too sweet to mix well for my tastes. However, mixed with shrimp, asparagus, a little olive oil, and garlic? Thumbs up!

Going to try it this week. meagan, thank you for the idea, but the alfredo sauce is so fatty, do you have a light alfredo sauce recipe? And caverlady thanks for the link, makes it easier for us that have never even seen one.

Someone was asking if spaghetti squash tastes like other squashes I would say it is completely different--not the sweet taste of other squashes.  It's yummy and sooo easy to prepare. Mel

After reading your post I had to go buy one. You got me craving it all last night! I never herd of spaghetti squash till now. It's so good. I love it.  I even felt guilty after eating it. I would say it's just as good as pasta if not better. This is the first time I've actually felt full in weeks.

Spaghetti squash is a variety of winter sqaush.  Winter sqaushes can be stored for many months in a cool, dry area.  They will stay a year or more in a fruit celler at 50-60 degrees F.   They won't last long at all in the refriderator.  Too cold.  But they should last at least a month in the average home.
