Oil substitutes in biscuit dough

Quote  |  Reply

Hey everyone, I'm going to make some biscuits soon, and was wondering what an appropriate substitution for the oil would be. I was thinking pumpkin or applesauce? I know that this works well in pastries/baked goods, but was wondering if it would suit a bisuit, since they're more of a savory food. Thank you for your time!

if you use applesauce or pumpkin, your biscuits will turn out sweet and will be more like a sweet scone than a biscuit.  I use mayonnaise as a sub for butter or oil - i use the 1/2 fat mayo(Hellmans i think)

heres a recipe that i use for biscuits:

The texture is not going to be like a regular southern style biscuit.  I just use a traditional recipe with the butter cut in, with buttermilk and make the biscuits smaller to cut the calories.

I often substitute plain, low fat yoghurt for butter in my cookies and muffins, and it works really well.  I'm assuming it would work for biscuits as well.

Let us know what you try and how it turned out?  I'm always looking for other substitutes for butter and oil as well. :)

I have not found a non-fat substitute for the oil.  I either use olive oil or Smart Balance at a rate of 1 Tablespoon per cup of flour in the recipe.  The biscuits are not as oily as standard ones you get in restaurants, but we like them.  The smart balance seems to make the biscuits fluffier if you cut it in cold.
