Old school fish hater needs cod/salmon fillet recipes
Hi all!
I am a definate fish hater, but have decided it is far too healthy and low cal to not have in my diet. That being said, I am begging anyone for good recipes to camoflauge the taste. I know fish lovers always tell me that I just need to try it done "right" and then I would love fish, so all you fish lovers out there, please let me know your "right" way to make cod or salmon, so I can eat fish without the gag reflex or crying!!!!

Well, I don't usually have cod, but I love salmon.
I'll take some herb blends and rub them over the fish and then put it back in the fridge for a while to marinate. Then I broil it. I have a ginger teriyaki salmon last week. Yum!
Also, try spritzing with lemon or lime juice before broiling.

I think the best way to get into fish is to disguise it slightly at first until you get used to it. Oven "frying" would be the way to go (you can do this with chicken too.)
Lightly beat an egg white (or you can use plain sour yogurt or low-fat sour cream) and lightly coat the fish fillets in it. Season fillets with salt and pepper. Dredge the coated fillets in whole wheat flour, wheat germ, crushed cornflakes, or bread crumbs and bake for 15-20 minutes at 425. (The fish will flake easily when it's done.) Serve with lemon. This works best with white fish like cod and pollock
Try up-ending a can of tuna or salmon into a thinnish marinara sauce and serve over pasta.

You might try cod cooked in a spicy tomato sauce. Salsa would do the trick. Put the sauce in a saute pan that has a lid. Bring it up to a boil, then reduce to a simmer. Put the fish on top and spoon some sauce over it. Put the lid on and cook until the fish just flakes with a fork. Don't overcook it.

Two - dont smell the fish whilst its raw/canned but not drained. It will tunr you right off it. Its a smell you gotta get used to. So either buy it cooked, or dont snif it, have another smell in the air (wear lipgloss) And wash your hands WELL after handling it. Or use gloves.
Cooking tips
Put the salmon (cooked) in things like salmon patties (made with low-cal veggies and egg whites), use instead of tuna (which is another good fish) on salads, but make sure its covered in something like cottage cheese.
Next step, try it in chunks. Maybe kebabs, alternating with shrimp or veggies. You ony need 1-2 kebab which would have 2 shrimp, 3 chunks of salmon. I saw a nice pick for salmon, mango and asparagus kebab, in a mango salsa. Can't use canned here.
Add it (cooked) to a light tomato pasta sauce made from tomato paste and chunks, mixed with veggies. The smaller the pieces the less fishy it'll be. And let it simmer for a while.
Lemon disguises the smell too, so if you are game enough to try a fillet, serve with lemon wedges
If you eat out, get it grilled well. Some places dont cook it all the way thru (esp Japanese places. its the equivalent of "blue") which can giev it a slimy texture
The worst thing you could do at the moment is cook a whole fillet then dump a sauce on top. Like Claire says, simmer it, so the flavours mix.
Eventually you'll be able to enjoy salmon like me - in parcels with just a squirt of lemon and some chives, grilled on a foreman grill. :D
I also put it on "pizza", but rinse it first (doesnt get rid of as many omega 3's as you think - water and oil don't mix... its more like a quick rinse to get rid of the smell. I dont do it anymore, but at first)

Start out with tuna steaks and salmon fillet. They're the most "begginner-friendly". For salmon I had this recipe the other day and loved it:

The only negative really is the sugar in the OJ. I found where the spices absorbed the oj it preserved the orange juice flavor and really brought the flavor of the salmon out, so if I did it again, I'd maybe put the spices on first, and then pour the OJ on so more gets absorbed.

I knew posting would be a wonderful idea! Ok, I will work my way through this list trying them one at a time and see what happens. I have resigned myself to eat it once a week to begin, so it will be a slow process. I think I will start with the ones with the most ingredients and spices since, for me, the taste just turns me right off. The more camoflauge for me, the better. My mother actually gave up making me eat fish at 6 when I projectile vomited across the table on my brother. Not to worry, it isn't an allergy. Had that checked, I just hate the smell, texture, taste etc...My doctor has been pushing fish on me forever and got me eating tuna (very well camoflauged in miracle whip, onion, celery and spice) and those omega eggs as a subsitute. But seeing as how I don't like eggs much either, I haven't been very good. So, I have gone out and purchased a whack of cod and salmon fillets and never one to waste things, I will eat them come hell or high water.
Anyone else with recipes, please let me know, I can use all the help I can get!

beacher, if you like to grill, you can rub the salmon (or other fish) with Mrs. Dash lemon pepper and grill. It is so good!

so i learned something new - the only way to really start liking fish, for me at least, besides cooking it right - make sure you get *FRESH* fish!
did you know fresh fish isnt supposed to have a strong fishy odor? it has almost no odor at all! it's incredible! i highly recommend it if you have that option!

Salmon is wonderful, if it is fresh, but here is a quick marinade (which you can also use on chicken) even if you use frozen filets (althought I would stick to the fresh stuff until you are used to it, the frozen stuff seems drier to me) the lemon will definitely "mask" any odor. Also, be SURE NOT TO OVER COOK IT!! There is nothing worse than dried out fish, it tastes like a cereal box with lemon on it.
Juice of 1 whole lemon + 3-4 TBS lemon juice
lemon zest (from the lemon you just squeezed.... maybe a teaspoonful
1 TBS olive oil (sometimes I don't even bother with this)
2 TSP garlic, minced
fresh ground black pepper
Onion (if you are inclined......minced, maybe 1TBS)
Throw all this in a ziplock baggie, mix, then add fish (salmon). Let marinade for at least 2 hours, (but not overnight, it gets tooooo lemony)
If you have a George Foreman grill - zap those suckers on the grill for about 4-6 minutes and BAM!

Fresh steamed green beans and brown rice are my usual sides with this...

I just ate this... It's pretty quick and easy... I used:
1 7 oz. portion FROZEN Salmon
1/2 Tbsp EVOO (I guess really any kind of Olive Oil would work tho)
1/2 Tbsp Rosemary
1/2 tsp Lemon Pepper seasoning (Salt free)
1/2 Lemon
Place the frozen Salmon portion onto a plate... Drizzle Olive Oil over it and then top with Rosemary and Lemon Pepper seasoning... Squeeze the juice from 1/2 Lemon over the Salmon and then Microwave for 4 minutes on HIGH (May vary according to Microwave... 4 minutes works for me... You want the Salmon to be pink and 'flaky')
Once it's cooked, you can pour off all the extra juice that will have sizzled out while Microwaving it... I like to top mine with a slice of Jalapeno Soy Cheese and a tbsp of Salsa... But that's optional... This is a meal in itself for me, but you can also serve it with Whole Grain rice or Green Beans or whatever suits your fancy... Just under 300 calories for the Salmon by itself though and 7 oz is a pretty good sized portion...
