Olive Garden's Zuppa Toscana Soup Recipe

Couldn't get any closer to the real thing!

Ingredients
3 medium potatoes
1/2 tsp salt
1 clove garlic, chopped
1/2 c onion, chopped
12 oz italian sausage
1/2 c spinach, chopped
1 tsp italian seasoning
2 chicken bouillon cubes
4 cups milk, 2 %
2 T cornstarch, dissolved
Directions
  1. Brown onion and garlic, add sausage and cook until done, but not crispy. In stock pot, cook potatoes in salt water, then add spinach and italian seasoning. When sausage is done, add to potatoes and continue to boil until potatoes are fork-tender.

  2. Drain off about half the water and add about 4 cups of milk, and the bouillon cubes. When they are dissolved, add the dissolved cornstarch and cook until thickened.
