Olive oil is a healthy natural source of fats. As long as you use it in moderation, it's a great part of a healthy diet. "One calorie spray" often has lots of additives and chemicals. You can make your own olive oil spray by buying an empty spritzer/mister bottle at your grocery store or wherever you go for cooking supplies. This should cut down on the amount you need to use.

There are lots of nutritional benefits of olive oil.   This website is typical http://www.healingdaily.com/detoxification-di et/olive-oil.htm  And nutrition aside, it's a great-tasting food!!  Drizzle a litte on crusty bread and it's like sunshine on a plate.  Smile Use stronger-flavoured extra-virgin on salads and milder tasting blends for cooking.

For higher heat cooking like a stir fry you're better off with sesame seed oil or avocado oil.  Olive oil is known for having fats that are great for you and a little bit can go a long way as a dressing.

Good point, olive oil tends to burn easily. If you don't cook at very high heats, though, don't worry about it.
