1. Log all your food and drinks with calories. To make sure you are logging the right amounts I strongly suggest weighing all your food.

2. Try to get a proper balance of protein,fat and carbs.

3. Fiber is your friend! Fiber helps you keep full and keeps your bowels healthy so try to get at least 25 grams a day.

Morning everyone. Congrats to Crazy! I weighed in today. Apparently I've gained 3lbs since Thursday. Not possible. I had a great weekend and calories were good. TTOM due to arrive today so the cause of weight gain maybe. Hope weigh in goes better for you Keegan.

Marlies, I'll have to think about the prize question. Not sure, Did have a wicked seafood salad this weekend.

Good morning, everyone! The convention was good, as I expected, but exhausting since we took a bus four hours east on Saturday morning and four hours back last night. We got in at 10:30 and as soon as my head touched the pillow, I was asleep. I know we're probably all going to be dragging today, so knowing that I'm accountable to this group should help me to exercise today. I think I'm going to lunch with a friend, but I'll eat as healthy as I can, I promise.

Cool that I won the prize! I don't know what I've won yet, though...but I never win anything! Cool

It was exceedingly difficult to eat healthy this weekend. I did the best I could. For lunch on Saturday, I had packed whole-wheat bread and ham and fruit and had a multigrain bar with it. For dinner, we went to a seafood restaurant (but Mexican, of course) and I had shrimp tacos and an order of queso fundido, which is melted cheese and mushrooms. The next day was much harder because my husband ended up buying fried chicken for our lunch the night before (I pulled off all the skin, I promise!), and later on the bus stopped at a 7-11 (convenience store) for our dinner. What healthy thing can you find to eat in a gas station? I ended up buying nachos and Cheetos...the first time I've eaten something like that for a while! What's funny is that I still bought diet sodas and waters and completely skipped the candy bars (I have a serious weakness for chocolate), so I went barely over maintenance on Saturday and didn't go over on Sunday even with the nachos, Cheetos, and fried chicken.

But now I'm back at work, back home, so this week should go better. Our fridge is basically empty, so hopefully everyone will be satisfied with eating my frozen spaghetti casserole for dinner, and afterward I'll go shopping.

I shouldn't have any trouble submitting a favorite healthy recipe. I have a WONDERFUL cookbook called Better Homes and Gardens Dieter's Cookbook, and I use it almost every day. I've had it about two years, so I've made almost every recipe in the book by now. I'll have to remember tonight to choose which one I probably make the most often.

My weigh in today was very dissapointing (not the word I used when I saw the number on the scale). I worked out more then 7 hours and ate between 1300 and 1800 cals. a day and still gained 300 grams. Last week was TOTM so I guess this is just another bonus for being a woman. I am feeling very discouraged right now but I willl stick to my plan of exericse and calorie counting. I know it works.

Immom I'm glad you had a nice weekend and good job watching the cals. I'm sure the 3lbs are due to TOTM so nothing to worry about.

Crazy The convention sounds tiring but nice that you get to do stuff with your husband. It is impressive that you stayed away from the candybars! Chocolate is my weakness too and living in Switzerland does not make it easy to resist, there is a chocolate store on every corner.

Keegan Please save the group by reporting you have lost weight! Honestly if you haven't I might lose all hope.

My weigh in was not as good as I had hoped for; only lost 2lb. I just don't get it I worked my butt off and watched what I ate. Well this is a new week so I am gonna hold my head high and smile and I am sure it will be better next weigh in.

Ok, here's one of my favorite recipes. Cajun-style burritos.

1 cup peeled, cooked crawfish tail meat or peeled, cooked small shimp

1 15-oz can black beans, rinsed and drained

3/4 cup roasted red sweet peppers

3/4 cup shredded Monterey Jack cheese (3 oz)

2 tablespoons snipped fresh cilantro

1 1/2 tsp chili powder

1/4 tsp ground cumin

Dash cayenne pepper

4 10-inch plain or flavored flour tortillas

Mixed salad greens

Bottled salsa

Rinse and pat dry crawfish/shrimp. For filling, in a large bowl stir together the crawfish/shrimp, black beans, sweet peppers, cheese, cilantro, chili powder, cumin, and cayenne pepper.

Divide filling among tortillas, spooning the mixture down the center of each tortilla. Fold in sides. Roll up tightly from the bottom. Place on a foil-lined baking sheet.

Bake, uncovered, in a 350 oven about 20 minutes or until golden and heated through. If desired, serve on salad greens and accompany with salsa.

322 calories per burrito if you use the 10-inch tortillas. Personally, I like to divide it up into smaller burritos/tacos. I just do the math. 5-inch tortillas, so it's 161 cals per taco, etc. Smile

Good morning, everybody. You know, I didn't feel like exercising last night and I told myself, "You deserve a break." But then I thought, "I don't want to let down Marlies, or Keegan, or Immom..." sorry to whomever I'm forgetting! So I did a lower-impact dance video for 30 minutes. Dancing with the Stars. I was proud of myself afterwards.

Oh, and did I mention that I did my measurements last night for the Schmooze and Lose challenge, and I lost 4 inches in the last ten weeks?

Here is my healthy recipe that I just tried...

Roasted Cauliflower Soup
2 heads cauliflower
3 garlic cloves
2 shallots
2 tablespoons olive oil
3 cups chicken broth
1 cup water
1 teaspoon finely chopped fresh thyme leaves
1 bay leaf
2 cups heavy cream

Cut cauliflower into 1-inch flowerets (about 10 cups). In a large baking pan
toss cauliflower, garlic, and shallots with oil to coat and roast in middle
of oven about 30 minutes, or until golden.

In a 4-quart kettle simmer broth, water, roasted cauliflower mixture, and
herbs 30 minutes, or until cauliflower is very tender. Discard bay leaf and
in a blender puree soup in batches until smooth (use caution when blending
hot liquids), transferring to a bowl. Return soup to kettle and stir in
cream and salt and pepper to taste. Heat soup over moderate heat until just
heated through.

Okay so here's my variations:

1. I added 1 cup of half and half instead of the 2 cups of heavy cream.
2. I also added 2 more cloves of garlic (can't get enough of the stuff)
3. I threw some green onions on the top
4. I added 1 more cup of chicken broth

It is very good and a good substitute for those really high fat creamy
soups.

Make sure you're measuring yourself too. The scale does not always represent your weight loss. I have an excel spreadsheet I am using where I am measuring my arms, legs, chest, waist, stomach and a couple of other parts. I normally measure myself once per week now....

Keegan I agree with JMH you might be losing inches turning some of your fat to muscle. Also make sure you are drinking enough. For every 15 min. of exercise you should drink an extra 8 oz. of water. If you don't drink enough your body will retain water.

JMH Smart move  replacing the heavy cream with half and half. I love soy milk as a substitute. It has very little calories and it adds a very light nutty flavor. Try it some time. By the way I am also a huge fan of garlic.

Crazy Great job getting your exercise in. Some times peer pressure is a good thing. And a big congrats for losing 4 inches that is amazing! I went to the postoffice today and mailed your prize.

Today was my day off and I went out to dinner with a friend. I let her chose the restaurant and we went to the Spagheti Factory. My choices were pasta or salad. I went with pasta because I really don't like salad. I only ate about half my plate so I think I did okay calorie wise. I exercised 75 min. this morning so I had a little bit of extra cals. to play with.

JMH, how many calories per serving of that soup, and how many servings does that recipe make?

Here's Another My Friend Made For Me...It is VERY filling and good! It is a pepperoni ziti casserole!

Ingredients
  • 1 package (1 pound) uncooked ziti or small tube pasta
  • 1/2 pound lean ground turkey
  • 2 cans (one 29 ounces, one 8 ounces) tomato sauce, divided
  • 1-1/2 cups (6 ounces) shredded part-skim mozzarella cheese, divided
  • 1 can (8 ounces) mushroom stems and pieces, drained
  • 5 ounces frozen chopped spinach, thawed and squeezed dry
  • 1/2 cup reduced-fat ricotta cheese
  • 4 teaspoons Italian seasoning
  • 2 garlic cloves, minced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon pepper
  • 1/2 cup water
  • 1 tablespoon grated Parmesan cheese
  • 1-1/2 ounces sliced turkey pepperoni
  • Cook pasta according to package directions.
  • Meanwhile, in a large nonstick skillet, cook turkey over medium heat until no longer pink; drain. Transfer to a large bowl. Add the 29-oz. can tomato sauce, 1 cup mozzarella cheese, mushrooms, spinach, ricotta cheese, Italian seasoning, garlic, garlic powder, pepper flakes and pepper. Drain pasta; fold into turkey mixture.
  • Transfer to a 13-in. x 9-in. baking dish coated with cooking spray. Combine the water and remaining tomato sauce; pour over pasta mixture. Sprinkle with Parmesan cheese and remaining mozzarella cheese. Top with pepperoni.
  • Cover and bake at 350° for 24-30 minutes or until bubbly. Uncover; bake 5 minutes longer or until cheese is melted. Yield: 10 servings.

 

Nutritional Analysis: One serving (1 cup) equals 306 calories, 7 g fat (3 g saturated fat), 37 mg cholesterol, 795 mg sodium, 42 g carbohydrate, 4 g fiber, 20 g protein. Diabetic Exchanges: 2-1/2 starch, 2 lean meat, 1 vegetable.

Because yesterday was my day off I went to bed late so now I am tired. I really don't feel like working out but I figure if Crazy can do it so can I. The kids are sleeping, the parents are out so the house is nice and quiet. I have everything ready for dinner but first I will use the gym. How is everyone else doing? Are you logging everything you eat?

Done exercising, only 30 min. of cardio instead of my usual 75 min. of cardio and fatburn but better than nothing.

I am going to get a tape measure today. Hopefully that will explain the slow weight loss. But for sure its going to be the excuse I use. haha 

Trying to figure out what recipe to type out but I am not sure which I like the best.  There is not many foods I don't like except chocolate. I am sure you ladies will want to shoot me for saying that.

I have got a spaghetti squash recipe but I will need to figure out the calories.  Not sure if anyone has ever tried that but it is good in place of pasta. I will get all the numbers figured out and post it later.
