Wow that sounds yummy. Do you slice them and slowly cook them until they are tender? Or do you leave them a little crunchy?
Since I have many other questions on how you prepared this, could you post your recipe here so that others could make it the way you did? I would love to try that.
All i did was sliced them up in long strips.....
put them on cookie sheet....I just threw them in with my chicken breasts that were cooking....350 degrees . After 10 minutes, turn and roast another 10 minutes. VOILA! They are still sort of crispy. I sprinkled with cheese after out of oven. I put Mrs. Dash garlic spice on prior to roasting.
I also just used cooking spray to lightly coat the pan.
Easy enough :)

I do something similar on the grill. Cut the peppers into chunks, season (I also use Mrs Dash,) put them on skewers, and grill them until done to my liking. Even better when you cut up a nice sweet onion and layer it between the pepper chunks. :)
The parmesan cheese, though - never thought of that! Next time I will! :)
i tossed em with a little bit of olive oil, garlic powder, salt and pepper. then i stuck em in a pita w/ a slice of light cheese and toasted it up in a pan with a little butter spray. it was sooo good!

These other recipes sound delicious as well. I will have to try all of these because I like all the foods listed, in fact the only vegetable that I don't like is cream of corn. I will have to find my grandmothers squash recipe and post it under the recipe section. It is so yummy and healthy. Thank you all.
I did almost the same thing with squash. I sprinkled it with italian seasoning, baked for 10 minutes at 350, flipped, baked another 10 minutes and sprinkled with parmesan. Very, very tasty.
