Onion lovers?
Ive always been a fan of onions although hadnt really been using them since I dont really cook 'recipe style'.
I recently discovered (and probably late doing so) heating a pan sprayed with pam and cooking thinly sliced onion produces an amazing result. Dont know if thats technically carmelized but it seems that way to me!
I can add cabbage as a simple stir fry with some pepper & garlic powder.
I can add sliced mushrooms for a great onion/mushroom saute combo.
I can pour scrambled egg over it for a flavorful omelet/fritatta thingie.
Im finding myself going thru bunches of this sauted onion as an amazing flavoring enhancer. Course a fan of the stronger chopped, raw onion as well.
Any other onion lovers?
I used to use some olive oil to fry my eggs, and one time I fried some onions in it and I reused the oil for my eggs, and my eggs had an oniony taste! It was sooo good! I've done that with garlic too. I love onions and garlic. Mmmmmm!

Ah, yes, I love onions. My family thinks it's a quirk. I sautee them, too, and add them to a sandwich or eat them alone. They are also one of the things I always add as a pizza topping.
I make your "caramelized" onions all the time! They are SO delicious!!! I just love onions! I simply broil them or grill them (after drizzling them with olive oil) and they taste just wonderful - no need for any fancy recipes. I find that if you mix onions & cabbage together, the cabbage sort of over powers... I would mix onions with bell peppers or your mushroom idea sounds pretty good...
Whenever I go to the store I always search for the LARGEST onions I can find.. and when I say large I mean the diameter or your 2 fists put together large! ha ha! I adore purple/red onions but the white ones/yellow ones will do too!!
Onions rule. Sauteed, raw, whatever.
My Dad always made raw onion sandwiches! I prefer mine "caramelized" in Pam or olive oil w/just a pinch of coarse salt. Perfect.
If you like that, you might want to try the easy french onion soup recipe on cooksillustrated.com. Just leave the bread and gruyere cheese out and you will have the most delicious carmelized onion soup ever!
ooooooh. Will try that. Don't know why, but I have never made onion soup. Maybe I was afraid of blackening the cheese properly on individual serving bowls. If I don't use it (or just add a small sprinkle of romano or something) it loses the fear factor!

Onions or garlic, an awesome flavor for oil!! I was just surprised how well with just pam they still turned out - thought that would require full blown oil in the pan and not just a spray.
That onion/mushroom omelette has become a daily. 2 eggs, 2 whites, too filling LOL at just 200 cal and the mush/onion dont add much calories to that so very reasonable shot of protein and more importantly flavor.
The onion soup sounds very tempting and I dont need the bread/cheese - I like the onion soup period. Will check that out!
I can't tell you how much I love onions, on or in EVERYTHING. I bet I buy 4 lbs a week just for hubby and I. I cut up at least 1 lg. onion everyday to go in salad, like you cooked carmelized with egg, in soup, in chili, in casseroles, with pasta dishes I could go on and on. I also love onions cooked with green beans and kind of stir fryed ( sort of chinese style) on the stove in olive oil with a little garlic ( fresh or powdered) and other seasonings like you like. I like the green beans to be a kind of crisp. ( of course I love downhome green beans too-- but am open to new options like this way I described0). onions, can't hardly eat without them myself !!!

I love onions with green beans too. I think the following is the only recipe I don't put garlic in LOL. There's some olive oil here, but by the time you divvy it up between all the servings it's not bad if you eat a healthy diet - the original recipe from Turkey calls for a whole C of olive oil!! -
Turkish Green Beans
Ingreds: 1 to 1/12 pound of trimmed green beans, 1/4 C extra virgin olive oil, 1 t. coarse salt, 1 yellow onion sliced, 3 T tomato paste, 1 t dark brown sugar, 3/4 C water or vege stock, fresh cracked black pepper.
Directions: steam the beans til just crisp tender (5-6 minutes or so), refresh them under cold water and pat dry w/ paper towels. In a large heavy skillet add olive oil over med high heat, 1 t salt, then onion. Reduce heat to med or med low and gently saute til onion is a beautiful rich golden brown - stir periodically to prevent scorching. Add tomato paste, brown sugar and water or stock, stir well. Increase heat to med high and add the green beans, black pepper and if you can eat salt, you can add more here.
Easy and fabulous.
I love onions. I put them in almost every cooked dish! I don't know why people don't like them... so much flavour for so few calories!
Yesterday I sauteed onions, mushrooms, and garlic in olive oil and put over steak. Today I took what was left, mixed with refried beans and heated in microwave. Then put on low fat/ low carb/ high fiber tortilla with ff cheese, salsa, and ff sour cream. Best fajita ever!!
Two thoughts here:
1. You had leftover sauteed onions, mushrooms, & garlic?!!!!!
2. combined with refried beans in a tortilla, that's the worlds most perfect food.
