Too many onions! What to do?
I have too many onions in my refrigerator right now. Any suggestions on what I should do with them? (no bacon please!)

Well, the first thing I'd do is take them out of the refrigerator if space is the problem. Onions don't really need to be refrigerated. They just need to be in a cool, dark place. They should keep for weeks (some varieties keep for months), so you don't need to rush to use them up. If I had a ton of onions, I'd make a few batches of veggie broth, caramelize some of them and keep them in the fridge to put on sandwiches, and make some French onion soup.
Oh yeah! But I don't really have stock or broth on hand (and wouldn't want to, either), and am getting kind of tired of onion-flavored soups (I've been having them for the last 3 weeks or so, sporadically, but still enough times)
hello white_sakura! there are many amazing recipes for onions.
1. onion soup!!! yummy! top with a little low-fat cheese and you're good to go.
2. snap peas and green peas with onions: boil water with salt and finely chopped onions for 5 minutes. add frozen peas and snap peas. cook as needed. drain. add 2 tbsps butter - for yummy goodness. and serve warm. the onions make all of the difference. you can forgo the butter or use a substitute.
3. philly steak sandwiches are great with carmelized onions.
4. add to stuffing to spice it up
5. finely chop and mix with hamburger to make flavourful patties
the list goes on and on and on. good luck! =)
Chop them and freeze in small bags. The next time you need chopped onions, there they are!
French Onion Soup
Slice a 2 pounds of onions. Heat 2 TBS butter (yes, butter. It's French) in a large saute pan. Put in all the onions on low heat and let them cook down, stirring now and then. Continue to cook until they are golden brown. Transfer them to a soup pot. Rinse the saute pan with water and add it to the soup. Cover the onions with water until they float - not too thin please. You could also add white wine if you have it. Taste and add salt and pepper. Cook, covered, on low heat for at least 20 minutes.
Ladle into oven proof bowls. Top with a round of toasted bread and some Gruyere cheese and run under the broiler until the cheese is melted and has golden flecks.
- Add them to a big pot of chili
- Make some soup
- Onion rings (there must be a fake-n-bake recipe out there)
Ditto on chopping them up and freezing them. That way they wont go to waste.
You could also do a low-fat potato and onion or mushroom and onion gratin :)

Bake and make them crispy for a salad
Make french onion soup with a little beef bullion.
Oh forgot...find some neighbor kids and let them have a free for all game with them...bowling for onions...(dangerous idea but sounds fun) lol
I like the baked onion/onion rings idea, and the hamburger idea. Thanks for all the suggestions, everyone! But yes, I was getting tired of onion soup, and thanks anyway to all the people who posted onion soup suggestions ;)
And does anyone know how long they will last in the freezer if I chop them? Do I have to, or can i just leave the onion the way it is and stick them in?
omg!!! i have the sameeeeeee problemmmm!!! my dads friend gave a whole sack of white onions and theyre just sitting on the table. I've tried: 1. making onion rings [didnt go well, i had no eggs at the time] 2. chopping them fine n putting them into my salad [works out great but im tired of salads -.-] 3. carmalizing them [was good, i added it to some chicken alfredo i made lol]

I agree with the chopping and freezing. I do it all the time. Extremely handy. As far as keeping them in the fridge, while not necessary for storage, keeping them cold reduces the tear factor while chopping them. Of course, if you take them out and let them get acclimated to room temperature again, here comes the tears. Wish I had some of your onions!

Great idea! or maybe putting them in a pinata....or letting them practice on a baseball field hitting them...sorry its my evil morning....not enough caffine (or maybe too much...I dunno lol)
I just did a Google search. You can freeze them whole, just wrap in newspaper before freezing. (The ice cream needs some good reading material). They're supposed to last 3-4 month in the freezer. I've never had any stay in the freezer that long because I'd put onions in chocolate cake if I thought I could get away with it.
You could make stuffed onions, sort of like stuffed bell peppers or take it in a different direction and stuff it with taco meat and low fat cheese, or some sort of pilaf/grain.
Hot Cheese sub...buy some sub rolls cut up a bunch of onions, have some tomatoes, peppers, lettuce put them on the sub and place some provolone cheese on top of it. Toast the sub in the oven for a few minutes. :)
stir fry. my favorite stir fry veggies combintion is onions, snow peas, mushrooms & water chestnuts.
