A sweet oriental main dish with tons of veggies. Adapted from a recipie by Rachel Ray.

Recipe Ingredients for Oriental Chicken

1 1/2 lbs chicken breast, diced to bite-sized pieces
2 large sweet red peppers
1 large onion, large dice
2 tablespoons chopped garlic
1 pound broccoli
2 zucchini, chopped
8 oz Hoisin Sauce
1 cup orange juice
1 tablespoon cornstarch
1/2 cup cashew nuts
2 tablespoons peanut oil

Recipe Directions for Oriental Chicken

  1. Coat chicken with cornstarch and black pepper to taste.

  2. Using 1 tablespoon oil, fry chicken in wok on high heat until well browned. Remove from pan and reserve.

  3. In same pan, use rest of the oil and add vegatables (onion, peper, garlic, first, then zucchini, and broccoli last). Fry, stirring often, until onions just begin to carmelize and all vegtables are well softened.

  4. Add in reserved chicken and cashew nuts. Stir

  5. In separate container, mix well Hoisin Sause and OJ. Add to wok. Stir and cook until liquid reduces to a thick consistently.

  6. Serve over rice.
