This is unbelievably good - we have to sit on our hands to stop from eating the whole thing at one meal.

Recipe Ingredients for Orzo with Grilled Asparagus and Feta

3 cups asparagus, washed and well drained with woody ends trimmed and cut into 1 1/2 inch lengths
6 ounces feta cheese
2 tbsp olive oil
1 tbsp mustard, preferably spicy brown
6 cloves garlic
2 tbsp lemon juice, freshly squeezed
2 tsp lemon zest
5 cups orzo pasta equiv to 1 12-oz package

Recipe Directions for Orzo with Grilled Asparagus and Feta

  1. Get the grill started and ready to go for the asparagus.

  2. Start water boiling for the orzo.

  3. To make the marinade for the asparagus:

  4. Zest the lemon and chop the garlic. Put into a mini-blender and chop it up till fine. Add the mustard and lemon juice, blend again. Add the olive oil and blend well. Add the marinade to the asparagus and make sure all the pieces are well coated.

  5. Add orzo to the boiling water and set the timer so you can test for al dente-ness.

  6. Put the asparagus on the grill.

  7. Watch the asparagus, turning and stirring so it doesn?t burn. Depending on how fast your grill cooks, it should be done shortly before the orzo is done. Take the asparagus off the grill.

  8. When the orzo is al dente, drain well.

  9. Put the orzo in a big bowl, add the feta, add the asparagus, and mix it all up.
