Very tasty and easy-to-prepare dish that makes a great alternative to traditional fried potatoes. Any combination of spices and seasonings can be used to suit personal tastes.
| 1 1/2 | pounds red potatoes |
| 2 | tbsp extra virgin olive oil |
| 1/2 | tsp salt |
| 1/2 | tsp pepper |
| 1/8 | tsp garlic powder |
| 1/8 | tsp onion powder |
- Cut potatoes into 1/2"-thick wedges and place in large bowl. Combine remaining ingredients and pour over potatoes. Toss well to coat.
- Spray a baking sheet with non-stick cooking spray. Arrange potatoes in a single layer on the baking sheet. Bake at 400 degrees F for 30 minutes, or until potatoes are tender and golden brown.
- Sprinkle with malt vinegar before serving, if desired.
