Very tasty and easy-to-prepare dish that makes a great alternative to traditional fried potatoes. Any combination of spices and seasonings can be used to suit personal tastes.

Ingredients
1 1/2 pounds red potatoes
2 tbsp extra virgin olive oil
1/2 tsp salt
1/2 tsp pepper
1/8 tsp garlic powder
1/8 tsp onion powder
Directions
  1. Cut potatoes into 1/2"-thick wedges and place in large bowl. Combine remaining ingredients and pour over potatoes. Toss well to coat.

  2. Spray a baking sheet with non-stick cooking spray. Arrange potatoes in a single layer on the baking sheet. Bake at 400 degrees F for 30 minutes, or until potatoes are tender and golden brown.

  3. Sprinkle with malt vinegar before serving, if desired.
