| 1 | medium squash, chopped |
| 1 | medium red pepper, chopped |
| 8 | oz. asparagus, chopped |
| 1 | onion |
| 2 | tablespoons olive oil |
- Chop zucchini, squash, red pepper, asparagus and onion into bite-sized pieces.
- Toss with olive oil
- Season to taste with salt and pepper if desired.
- Roast at 450 for 30 minutes, stirring occasionally.
