Pancake mix and applesauce
I purchased a box of pancake mix and it calls for oil and eggs to be added. Has anyone tried to use applesauce instead? If so, what was the results.

I bake with applesauce instead of oil when I can. I suggest poking around google for a good guide on applesauce substitutions because it can vary depending on what you're cooking. The result, in my experience, is a slightly wetter texture. If you eat your pancakes without butter, you might notice the 'fat' component of the pancake seems a little less 'fatty/smooth'. I don't know how else to explain it.
If you're trying to cut the calories in pancakes, I suggest cutting out egg yolks. If it calls for two eggs, you might try 1 white and 1 egg, Your pancakes will definitely be less creamy but if you cut out the whole egg, you lose a major part of the ingredients that give the pancake its fluff! Be sure to really whip those eggs (or egg whites) into a bubbly mixture before adding them to your dry ingredients. It will help with the pancake fluff.
If you try the applesauce approach, try using an applebutter spread or pumpkin butter instead of butter/syrup. Both are usually available at Trader Joes, Whole Foods, any higher-end grocery and they tend to compliment the applesauce baking flavor very nicely.
Oh yes, one last thing! I use unsweetened applesauce only for baking! Be careful of adding sweetened applesauce to boxed baking mixes. You don't want to add any more sugars if you don't have to.

Thanks for your reply...it helps me greatly!! I purchased no sugar added natural applesauce, I think that will work for the oil. I will also do what you suggested with the eggs. I will just to have to experiment with it, since this is my first try at substituting the oil.
