Okay so its pancake tuesday here and I love them and must celebrate, but Ive been very bold this weekend so cant go too crazy. I have a mix that consists of 232g, making 10 pancakes, i figure I'll use 100g of the mix and have 4.5 pancakes, 100g of the dry mix is 200 cals. But to make 10 pancakes you need 1 egg, 500 ml of water and 7 tspns of oil.

Now Im making a little less than half the batch, so my question is will 1-2 egg whites work and 3.5 tspn of olive oil low fat spray? Guessing this ought to bring my total to 250 cals approx. for the 4.5 pancakes? anyone any experience of how this works?

Edited to Add: I know a lot of recipes call for apple sauce instead of oil, but its not readily available here!

I love pancakes. I use buckwheat, an egg white and water.They turn out very fluffy and good. I use fruit flavored sugar and sugar substitute free apple sauce and fresh fruit as a topping.

cool, sounds good, but as I dont have buckwheat at the moment & dont particularly want to waste the mix I do, is it feasible to make the substitions suggested? I will def try those buckwheat ideas again though, thanks.

I would halve the amount of oil (and you might as well use regular oil rather than try to measure out 3 tsps of an oil spray - how would that work!?!).  I would also use the entire egg rather than just the white.

Bake them all and freeze the ones you don't want to eat. If you put a sheet of greaseproof paper inbetween you can fish out a pancake for a quick treat sometime next week!

Well, I made half, they were delicious! It turns out they needed just the water added and I used the whole egg, the oil needed is for the pan, so I was able to sub for 0 cal spray on a non stick pan!
