I LOVE pancakes. Any kind, any type, whatever kind of pancake you set on my plate I'll devour it. But, problem is, all the pancake recipes I encounter are ~500 calories for just a few 4-5! I don't mind mini small pancakes, with pancakes I love quantity over quality, so can anyone shoot me a recipe that will be relatively low calorie for like tons of them, heh? :]

I always love fresh fruit & honey for some healthy options, but I like to indulge and maybe put some butter or some syrup on top. It's all up to you on how you want to customize your pancakes. ;-P
i was wondering if there was anything i could actually mix into the batter? i was thinking an apple and cinnamon type addition, but maybe id have to precook the apples before adding them? or maybe something w PB or chocolate?

I'm not an EXPERT at making pancakes, so sorry in advance if I don't have ones you might like hehe. Putting in some cinnamon would be great with your pancakes and maybe if you want some pumpkin pancakes I saw a recipe that added some canned pure pumpkin and some pumpkin pie spice. Vanilla may bring out some good vanilla flavor into your pancakes. Blueberry pancakes are also good, no need to pulverize them in the food processor or mash them or anything, whole blueberries will work fine and dandy along with a good yum into your pancakes. I have heard of sweet potato pancakes along with pecan, it all depends on you. :] Let your imagination on pancakes go wild.

Have you thought of doing crepes instead of pancakes? thin, delicious and very few calories!
Here are some of my own recipes - crepes at 62 kcal each (C+ grade) - these don't have sugar but it can be added (for savory crepes eliminate vanilla), this one is for cottage cheese pancakes at 57 kcal each (C+ grade), and this one is for regular pancakes at 70kcal each (B grade) (not thick)
I add blueberries, strawberries, bananas, etc.. I substitute some of the flour for oatmeal, or wheat flour.. Notice that most pancake recipes call for oil but I never add any.. really not needed.
Edit - PS.. Please note that all my recipes have SOYMILK (light, plain) instead of milk.. and you really can't tell the difference.

v_avila, i agree, crepes are a great suggestion. i wonder how a couple of packets of that "french vanilla splenda" would taste in the batter recipe.

Oh yes! although I don't like the taste of artificial sweetners, I love to add some FF French Vanilla or Hazelnut creamer (a tablespoon or two) to the batter (substituting some of the milk/soymilk actually so the batter doesn't lose consistency) AND also great in the egg/milk mixture of French toast.. yummy!! I am so making French toast tomorrow.. =)
Bananas are pretty good in pancakes, if you like them! They kind of make them a little gooey on the inside.
I use all whole wheat flour for my pancakes. I think they taste way better than white flour pancakes.
I use Whole Wheat Pancake Mix... if you use 2% milk, it's 200 cals for three 4" pancakes... Then I top them with sugar free syrup... it's 35 cals a serving versus 210...
Here is my recipe for cinnamon pancakes. Its not super low cal per pancake (a 5 inch diameter is a good size) but they're rich, moist, and delicious so maybe you can do quality instead of quantity with these.
You can substitute the cinnamon, vanilla extract or almond extract for whatever spice or extract that you want.
If you use 3 tablespoons of melted butter (instead of the applesauce) in the batter it raises the calories to around 130 calories per pancake.
Cinnamon Pancakes
Makes 12 servings (about 5 inch diameter)
91 Calories per Pancake
Ingredients
1 1/2 cups all-purpose flour
3 tablespoons brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups skim milk
2 tablespoons unsweetened applesauce
2 large eggs
1 teaspoon vanilla
1/2 teaspoon almond extract
1 teaspoon cinnamon

Also vegan pancakes, the same size (5" diameter) are even lower in calories. Don't let the word "vegan" scare you away though, they taste just as good as the regular pancakes with eggs and milk in them.
Vegan pancakes have 76 calories per pancake, and again you can add as many spices or extracts as you want for extra flavour. You could have 4 pancakes for 304 calories :)
Vegan Pancakes
Makes 12 servings (about 5 inch diameter) 76 Calories per Pancake
1 1/4 cup Flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp salt
2 tbsp oil
1 1/2 c water
Do a recipe search on Buckwheat Pancakes. It seems much lower than white flour. Also, substituing Buttermilk for regular milk will reduce fat, as well.

try chocolate chips in the batter - choc chip pancakes yummm takes me back to middle school haa..

You can also make chocolate pancakes by adding 1-2 Tbs. of cocoa powder to your pancake mix. These are delicious as a dessert, you can top with ff cool whip or low fat vanilla ice cream......Mmmmmmm!

Just pop the rest of the bag into the freezer. Then you can eat them plain for an easy chocolate fix [frozen chocolate = heaven] or you can add some chips to pretty much ANYTHING haha- oatmeal, more pancakes, etc.
