I started to stay away from eating pancakes for a long time after i looked up how many calories normal ones had. They were sooo good, but seemed to be anywhere from 100-200 calories PER pancake!
Well, today i had pancakes on my mind...so decided to look around and see what were in them (i dont use mixes... looked at some pancake mixes in the store and there were all kinds of stuff in there beyond the normal pancake ingredients).
After researching...i found out that pancakes are basically just milk and flour!
Anyway, i ended up making some pancakes trying to cut out as many calories as i could (while still having it taste good).
Final creation was -
1 cup flour (400 calories, woooops!)
1 cup buttermilk (110 calories)
1 cup water (0 calories)
1 Tablespoon baking powder
dash of vanilla (i like vanilla ><)
Ends up making enough for 6 - 8 pancakes (normal sized, 6" - 8" across). They taste just like normal pancakes too!
I used buttermilk instead of normal milk because of the added flavor (normal milk wouldnt bring enough flavor i dont think, maybe even chocolate milk would work). I used water to thin it out (increase the amount of batter and keep calories low, without the water its too thick). And the baking powder makes it nice and fluffy! (make sure you add the powder right before cooking).
Then to save more, use a non-stick pan (dont need oil, just make sure the pan is clean if it starts to stick).
I ate mine with sugar-free jam (10 calories per tablespoon, normal pancake toppings would rocket the calories up).
Anyway, I think I love pancakes again (we have moved past our love-hate relationship). These things are so low calorie...i can eat them anytime (even a snack between pancake lunch and pancake dinner!).

I don't know if you're ready to experiment with the world, but this is my waffle recipe, which is also a very good pancake recipe.
Um, what kind of flour are you using? 'Cause mine's like 400 cals per cup...

I make up my own pancakes too sometimes. Here's what I come up with:
cup of wheat flour
half cup of egg beaters
quarter cup skim milk
1 scoop protein powder
teaspoon vanilla
dump in some cinnamon
Sometimes throw in mixed berries once they're on the pan.
I make giant pancakes in my smallest fry pan. I make the cakes the size of the pan. This will make 3 or 4 pancakes that way. LOL Easily enough for 2 breakfasts!
Top with Mrs. Buttersworth's Sugar Free syrup (only 35calories per quarter cup serving).

If you take the sugar free jam and put it in the microwave in a coffee mug then pour it while its warm on the pancakes its awesome! You wont miss the Mrs.Butterworth one bit!
I invented a banana pancake recipe this morning, that must have been good, my 13 year old ate 5, [he's 5' 10 " and still growing}.
I took one very ripe banana and mashed it up well, like baby food, added about 1/4 sugar [ amount dependant on how sweet banana is], added 1/4 cup of canola oil, 1 cage free, omega 3 egg, 1 tsp of vanilla extra, and seasoned with cinnamon, nutmeg, powdered ginger and cloves. and 1 1/2 cups low fat milk. Separatly I combined 3/4 cup each of all purpose unbleached flour, and white whole wheat flour and about 1/4 to half cup steel cut oats, {depends on how thick you want your pancakes} along with a teaspon each of baking soda and baking powder . combine moist and dry ingredients until just combined.
fry like regular pancakes. I normally hate bananas but these are really great. I'm even learning to love my old nemisis. the banana.
My son thought they were the greatest things ever. YOu could alter the white/wheat flour ratio if you want more fiber. this recipe makes about 6 - 8 pancakes roughtly, depending on how big you make them. I haven't done the calorie info yet.
they are great with maple syrup, if you like nuts you coud also add walnuts.
I've also made pancakes with yogurt in them, which can add great flour and make them quite fluffy.

I think this weekend I'm going to try pancakes with Bisquick Heart Smart mix. only 140 calories for a 1/3 cup serving and 3g protein. Plus I have some fresh blueberries. =)
Could you replace the regular flour with Whole Wheat?
Yup you can...and i also found out that sugar-free jam (10 calories per tablespoon!) can be used to flavor them. Also can be melted in microwave or mixed with water to be used as a topping.
