i'm in dire need of a recipe for low calorie pancakes.
well not dire, but i really really want one.
i love love pancakes...and i want to be able to indulge guilt free!!!!!

Depends on what you're into. if you dont mind carbs, its easy.
I like these. Add slices strawberries on top or for a REAL treat, cut chunks of no fat cream cheese into TINy cubes and put in the freezer until hardened, and at the last sec pop into the better. messy but yum.
1/4 cup whole wheat flour
1/4 tsp baking powder
1/2 Tbsp Splenda
1/4 cup FF milk
2 Tbsp egg beaters
1/2 tsp vanilla
Mix flour, baking powder, and Splenda together. Gently stir in milk, egg beaters, and vanilla. Pour onto hot sprayed griddle and cook until golden on each side. I got 4-5 piklets out of this and it was plenty.

I use the same recipe as red_herring, but I use 1 egg white instead of the egg beaters and sugar instead of splenda. Mmm, delicious. I top it off with a bit of maple syrup, or 50 blueberries and a packet of splenda in the microwave for 30-40 seconds.

Pancake or waffle batter
I've made this batter quite a few times and it works great! In a food chopper or processor you blend 1/2 cup of oatmeal till it's oat flour. If it's not perfect flour that doesn't matter. Then do the same with 1/2 fat free cottage cheese till there aren't any more lumps. It will look like sour cream. Put them together in a bowl along with splenda, vanilla, cinnamon, one egg yolk and blend well. In another bowl, beat 4 egg whites till stiff peaks form. Fold the mixture into the egg whites till its blended well. Spray pan or belgian waffle maker w/pam, and ladle it on. On a pan for pancakes, it will be very fat like 1 1/2 to 2 inches thick. Brown on each side, and when you take it off the heat it will flatten by itself. Eat with sugar free preserves, or sugar free syrup. It tastes great. When making waffles, my experience has been that it works well with a deep waffle maker. The shallow ones don't work well.

If you can find Bisquick Heart Smart baking mix, it makes great pancakes. You can substitute Egg Beaters or egg whites for the whole egg.
I make protein pancakes:

1 tsp artificial vanilla extract
1 cup low fat or fat free cottage cheese
1 cup oatmeal
Blend, and use as pancake batter. I love them! (they're good cold with peanut butter, too)

Jenarice: The recipe is great. Can I add a banana or splenda or cocoa powder instead of brown sugar?

1 teaspoons of baking powder
1 teaspoon of salt.
Add 1 1/2 cup of cold water and mix until the consistency of cake batter. Now add 1/2 cups of hot (not boiling) water. Mix well to a light batter, too thick is not good. Spoon into a hot greased griddle. Do not flip, let the air cook through the top.

I'm Australian, and your names for some foods are different to what we're used to them being called here...
Could someone tell me what Cilantro and Buckwheat flour is please ?? :)
not sure what buckwheat flour is but cilantro is parsley :)
I thought Cilantro was Coriander?
Cilantro is coriander NOT parsley
Buckwheat is the same here. :) Its just a type you can get. Pancake parolour has them, and orgran sells buckwheat pancake mix.
