Okay so I like to eat pancakes for breakfast about once a week. I recently became a vegan and saw that Aunt Jemima's whole wheat pancake mix IS vegan! But it calls for eggs and milk for preparation.
Can I substitute the egg and milk for half a banana and some vanilla soy milk? Will water work? Does anyone else have any ideas?
I normally stay away from processed foods, but when it comes to pancakes I usually use the box kinds to keep the calories low.
Or does anyone have a fairly low calorie recipe for fluffy, yummy vegan pancakes? (Keep in mind that I do not have any energy egg replacer yet.) I plan to get some within the next month but until then cannot afford to buy any. (The health food store is REALLY far from where I live.)
I'm REALLY trying hard to eliminate processed foods altogether- it's one of my new year's resolutions.

Soy milk works perfectly fine, rice milk and almond milk are good, too. :)
For the "eggs" in pancakes I like to use milled flax seeds, you use 3 tablespoons mixed with one tablespoon of water for one "egg". You can usually find milled flax in the baking aisle of any grocery store. I live in a small town in central Texas and I get it here no problem!
I don't know if these will be fluffy enough for you - you'll have to see for yourself. I love them, though.
Banana Pancakes:
- 1 banana
- 1 cup soymilk
- 1 cup flour
- 1 tablespoon sweetener of any kind (have fun with this!)
Put in bowl. Mix well. Make pancakes as usual.
They are just like regular pancakes except slightly more squishy if you don't mash the bananas well enough, and tend to be more nutritious. :)
Next time I go grocery shopping I'm gonna look for the Arrowhead Mills organic Blue corn pancake mix .
Or their rice/ whole wheat pancake mix. Both kinds are dairy free and 100% organic- hopefully they'll have them at my grocery store!
In my experience they work for a medium meal for 2 people. If I remember correctly the whole batch is ~600 cal.
400 = 1 cup flour
100 = 1 banana
90 = 1 cup soymilk
?? = 1 tablespoon sweetener
Of course, if you use a calorie-reduced soymilk (do those exist? haha) and a no cal sweetener if would be more around 500.
It's easy to add or subtract from the recipe if you want, ex:
- 1/2 cup flour
- 1/2 banana (refrigerate other half)
- 1/2 cup soymilk
- 1/2 tablespoon sweetener
I'm not vegetarian, but I have some friends coming to visit and his wife is vegen and he's mostly vegetarian (he likes fish and eggs still) so I am looking for recipes. One thing I know, from having lived in a small town, most of your local grocery stores will order it for you if you request it. Check with the store manager to see if they can order it for you. However the ingrediants say "may contain traces of eggs" so, depending on how much of a stiffler you are, you may or may not consider it vegan. I would, since usually "may contain traces of ... " means that its pretty damn unlikely but just for legal purposes they gotta say that, just to cover their arses.
