Parmesan Zucchini Fries Recipe

More delicious and lower carb than potatoes!

Ingredients
1 Zucchini, medium (julian sliced)
2 large eggs
1 tsp extra virgin olive oil
1/4 cup parmesan cheese
2 tbsp wheat bran
2 tbsp bread crumbs
Directions
  1. Preheat oven to 400oF. Line a cookie pan with non-stick foil for easy cleanup.

  2. Mix with a fork egg and extra virgin olive oil in a small dish.

  3. In a small Mixing bowl combine parmesan cheese, wheat bran, and bread crumbs.

  4. Coat each zucchini with egg mixture then cheese mixture and arrange on cookie pan.

  5. Bake 12 minutes then broil 5 minutes. (no flipping necessary) Season to taste!!
