| 1 | Zucchini, medium (julian sliced) |
| 2 | large eggs |
| 1 | tsp extra virgin olive oil |
| 1/4 | cup parmesan cheese |
| 2 | tbsp wheat bran |
| 2 | tbsp bread crumbs |
- Preheat oven to 400oF. Line a cookie pan with non-stick foil for easy cleanup.
- Mix with a fork egg and extra virgin olive oil in a small dish.
- In a small Mixing bowl combine parmesan cheese, wheat bran, and bread crumbs.
- Coat each zucchini with egg mixture then cheese mixture and arrange on cookie pan.
- Bake 12 minutes then broil 5 minutes. (no flipping necessary) Season to taste!!
